Westland Distillery in Seattle has earned a reputation for redefining American single malt, while Blackadder is renowned for its Raw Cask bottlings that champion texture, purity, and individuality.

Westland 2019–2025 Cask 7333 is a peated American single malt matured in a first‑fill Pedro Ximénez sherry butt and bottled at natural cask strength, unchill‑filtered and presented with the Raw Cask hallmark of maximum flavour. Seattle peat smoke wrapped in lush sherry sweetness, with American oak spice and grain character binding everything together. Within a single bottle the whisky reveals new shades from pour to pour and sip to sip, shifting between dark fruit, maritime peat, and bold malt. It is designed as a powerful, characterful dram for those who appreciate both deep smoke and dense sherry influence.

Sullivans Cove Double Cask epitomises the art of blending, created by Distillery Manager, Heather Tillott and the Sullivans Cove Distillery Sensory Team. This exceptional single malt whisky marries the distinctive qualities of French and American oak casks in every small batch. Adorned with both tropical and stone fruits, sweet notes of caramel and vanilla, spices such as cinnamon and nutmeg, plus nutty, floral and herbal nuances that all contribute to the intricate flavour profile. Double Cask offers unparalleled complexity and length, a testament to its meticulous craftsmanship. The Double Cask DC121's youngest component was aged 7 years, and its oldest component was aged 18 years. Maturing in a combination of French and American oak, DC121 was bottled at 47.3% and yielded 1,295 bottles.

In Greek mythology, the Chimera was a terrifying, fire‑breathing creature made up of a lion, a goat, and a serpent or dragon – a symbol of things wondrously, impossibly combined. At Blackadder, Chimera is presented as a single, unified whisky born from carefully chosen single malts, each bringing its own character, all harmonised into one extraordinary dram.

Blackadder is best known for its single cask bottlings, and Chimera was chosen as the perfect name for this special range of exclusive blended malt whiskies. Each Chimera is vatted together for extra ageing, then returned to and bottled from the individual single casks in which the constituent malt whiskies have been married, ensuring no two releases are ever the same.

Chimera 2025‑01 brings together four distinct Single Malt Whiskies: a Single Islay from a refill cask, a First Fill ex‑Bourbon cask malt, a Sherry cask Highland, and a Sherry cask Speyside. Blackadder describes this beautifully crafted whisky as a Vatted Malt – a marriage of distinguished individuals that offers evolving nuances from sip to sip.

Kanosuke Sherry Cask Vatted is a limited-edition Japanese single malt from Kagoshima, crafted using a blend of whiskies matured in Oloroso and Cream sherry casks alongside ex-shochu, bourbon, red wine, and new American white oak casks. Distilled in the distillery’s three pot stills, it reflects Kanosuke’s house style—elegant, layered, and gently complex—where sherry richness is balanced by brightness from new oak and a subtle “wa” spice influence from shochu casks.

At 48% ABV, it opens with aromas of dark cherry, vanilla, Japanese cinnamon, and raspberry.
