It was a pleasure to connect with the teams from Pol Roger, Tempos Vega Sicilia, Domaine Faiveley, Château Quintus, AXA Millésimes, Famille Perrin, Domenico Clerico, and Domaines Schlumberger, as well as many of our great partners from across Bordeaux..

Alongside the conversations, we had the chance to taste a range of exciting wines, gaining first-hand insight into the vintages and philosophies that continue to define these renowned estates.

Discover Domaine Roland Lavantureux 🍇



Domaine Roland Lavantureux is a family estate in Lignorelles, Chablis, with roots stretching back eight generations. Founded in 1979 by Roland Lavantureux, the domaine grew from a small family business into a respected 20-hectare estate, now led by his sons Arnaud and David. The team carries out all vineyard work, vinification and bottling at the domaine, with Arnaud overseeing the vineyard and winemaking while David leads sales and marketing.

Today, the estate is known for its full range of Chablis wines, as well as Bourgogne Épineuil and Bourgogne Tonnerre, and for a style defined by freshness, saline energy and precise mineral drive.

With old-vine holdings, a clear focus on expressing each terroir and vintage, and new projects including the steep 1er Cru Vau de Vey plus parcels in Bourgogne Tonnerre and Épineuil, Lavantureux continues to build a reputation for Chablis with depth, tension and character.

James Suckling captures the style well: “The concentration is impressive here with sliced lemon, green apple and electric acidity.”

Spotlight on two 2022 cuvées:

Domaine Lavantureux Chablis Vauprin 2022 – A pale lemon-yellow Chardonnay showing an ultra-refined, chiselled bouquet. Crisp, saline and beautifully precise, it delivers pure white fruit, razor-sharp tension and superb length. Fermentation takes place in stainless steel for finesse and precision, followed by 12 to 15 months of ageing, split between stainless steel and new oak. (JM 92, 5-Star)

Domaine Lavantureux Bourgogne Épineuil Les Fauconniers 2022 – Bright purple in colour, with strong reduction at first but an impressive wave of fruit underneath. Meticulous sorting, destemming and long fermentation under controlled temperatures lead into 15 months of ageing, mostly in new oak, giving structure, depth and serious promise. (JM 90-91, 5-Star)

🍾The Churchill Standard: A Modern Canto Showcase with Pol Roger at NUVA



The finest Champagne pairings are rarely about power alone, but about cadence — how acidity, texture, and minerality evolve across a meal.

At NUVA, Pol Roger’s wines were presented through this exact lens during a contemporary Cantonese showcase hosted by Hubert de Billy. The menu moved effortlessly between delicate cold preparations, wok-fired dishes, and richly savoury courses, each revealing a different facet of the house style.

Réserve Brut NV opened with notes of orchard fruit, honey, and brioche, while Rosé 2018 layered raspberry, redcurrant, and rose petals against smoky char siu.

Blanc de Blancs 2016 brought a striking chalky precision and saline finish to the crab shell course, before Brut 2018 unfolded with broader texture and pastry richness alongside Hainan style chicken.

The final pairing — Sir Winston Churchill 2018 with abalone and mullet roe rice — captured the spirit of the evening perfectly. Structured yet expansive, the wine’s smoky depth, spice, and persistent mousse carried through the dish with remarkable composure and length.

An immersive dinner that highlighted the versatility of Champagne at the table, framed by NUVA’s contemporary elegance and panoramic sea views.

🍷The Plateau’s Edge: Exploring the Terroir of Quintus at Ying Jee Club



Set against the limestone plateau of Saint-Émilion, Château Quintus reveals a striking sense of elevation — both in terroir and in expression. At Ying Jee Club, this sense of clarity found a natural counterpoint in the precision and depth of Cantonese cuisine.

Hosted by Nils Vaincot, Sales Manager of Château Quintus, the evening unfolded as a dialogue between structured limestone-driven reds and the layered textures of refined Cantonese cooking, where wok hei, umami, and delicacy were carefully calibrated across each course.

From the crystalline lift of Saint-Émilion de Quintus 2021 to the evolving depth of Le Dragon 2020 and 2015, the wines traced a spectrum of energy and restraint. The Grand Vin Château Quintus, in both 2021 and 2012, framed the later dishes with a composed interplay of floral aromatics, graphite tension, and fine, integrated tannins.

The pairing of Delamotte Brut NV with the opening selection set a precise and refreshing tone, its citrus-driven tension echoing the brightness of the appetizers, before gradually giving way to richer, more structured expressions of Merlot and Cabernet Franc.

A composed evening where limestone, fire, and finesse converged in quiet harmony.

Saturday night at Loaf On, the one-star Michelin restaurant in Sai Kung unfolded over Champagne, seafood, and one beautifully paced table.

Hosted by Hubert de Billy, fifth-generation owner of Pol Roger, guests explored a selection of the house’s cuvées alongside Loaf On’s signature Cantonese dishes — a menu built around pristine seafood, wok aromatics, and the natural sweetness of the ingredients themselves.

Brut Réserve NV opened the evening with freshness and finesse, its fine mousse and citrus-driven profile working effortlessly with the delicate scallops and razor clams. Blanc de Blancs 2016 brought sharper mineral tension and salinity to the lobster courses, while the richness and layered depth of Sir Winston Churchill 2018 carried seamlessly into the savoury intensity of the honey-glazed pork ribs.

Founded in 1849, Pol Roger remains one of Champagne’s great family-owned houses, with a style defined by precision, patience, and understated confidence. Those qualities showed clearly throughout the dinner — not through excess, but through balance, texture, and remarkable persistence in the glass.

One of those evenings where every bottle seemed to arrive at exactly the right moment.

Rare 2009 Grand Crus from Domaine Faiveley were poured alongside the Michelin-starred cuisine of Don Alfonso 1890 Macau for an evening that explored Burgundy through both maturity and precision.

Hosted by Matthieu Luneau, Export Sales Director of Domaine Faiveley, the dinner centred around a remarkable selection of wines spanning Meursault, Corton-Charlemagne, Échezeaux, Clos de Vougeot, and Latricières-Chambertin — with the 2009 Grand Crus offering a particularly compelling look into one of the defining vintages from the early years of Erwan Faiveley’s leadership.

The pairings moved seamlessly across the menu. Corton-Charlemagne brought tension and layered minerality to the scampi carpaccio and sea urchin pasta, while the mature reds unfolded gradually through the richer courses, revealing notes of spice, forest floor, dark berries, and savoury earth with increasing depth in the glass.

Rooted in Nuits-Saint-Georges since 1825, Domaine Faiveley continues to stand among Burgundy’s great family domaines, balancing generations of heritage with a progressive approach to viticulture and sustainability across its vineyards.

An evening defined by mature Grand Cru Burgundy, thoughtful cuisine, and the quiet complexity that only time can bring to both wine and conversation.

A thoughtful pairing of Burgundian terroir and modern Chinese craftsmanship, as Henri Boillot’s wines accompanied an intimate omakase lunch at YUN in Sheung Wan.

Hosted by Henri Boillot, guests explored a range of the domaine’s celebrated terroirs through wines spanning Meursault, Puligny-Montrachet, Volnay, and Echézeaux — each showing the house style with remarkable clarity, tension, and mineral precision.

The wines paired beautifully alongside YUN’s contemporary Chinese omakase menu, where classic wok-fired flavours were reinterpreted through a refined counter dining experience. The saline energy and limestone tension of the Puligny-Montrachets complemented the delicacy and layered umami of the dishes particularly well, while the deeper texture and structure of the reds brought another dimension to the later courses.

A beautifully composed lunch where structure, finesse, and texture met in quiet harmony from first course to last.

🍷 Staff Training & Trade Masterclass — Domaine Henri Boillot

We recently had the pleasure of welcoming Henri Boillot for a staff training and trade masterclass, offering a deeper understanding of one of Meursault’s most respected domaines and its enduring pursuit of precision, purity, and terroir expression.

Representing the third generation of the family estate, Henri Boillot shared insights into his philosophy both in the vineyard and cellar — a vision rooted in restraint, freshness, and clarity. One particularly fascinating discussion centred around the domaine’s use of 350L oak barrels rather than traditional smaller formats. By reducing the ratio of wine in contact with oak surface area, the élevage preserves greater tension, minerality, and freshness, allowing the identity of each climat to remain uncompromised.

The tasting moved through a range of the domaine’s key terroirs, including Clos Richemont in Meursault — a monopole acquired in 2018, with its inaugural vintage released the following year — before arriving at Clos de la Mouchère, the family’s historic Puligny-Montrachet monopole and a wine deeply intertwined with the Boillot legacy. Held by the family for more than 85 years, Henri himself has worked across 44 vintages of this site, whose proximity to acacia trees often lends delicate white floral aromatics in youth before evolving into layered honeyed complexity with age.

Discover Domaine Michèle et Patrice Rion 🍇



Domaine Michèle et Patrice Rion was founded in 1990 by Patrice and Michèle Rion in Premeaux-Prissey, and has since developed into a respected Côte de Nuits estate with holdings in villages such as Nuits-St-Georges, Chambolle-Musigny, and Vosne-Romanée. The domaine built its reputation on a precise, terroir-driven style, combining careful vineyard work with thoughtful cellar practices to produce wines that are refined, expressive, and classically Burgundian.

Today, the estate is led by the next generation, with Maxime Rion firmly in charge, while Patrice remains present at the domaine. The family is also expanding its winery to accommodate vineyards inherited from Domaine Daniel Rion in 2022, reinforcing the domaine’s long-term commitment to both continuity and growth.

What defines Domaine Michèle et Patrice Rion is its balance of tradition and evolution: a family-run Burgundy estate rooted in serious vineyard sources, modernised by the younger generation, and focused on wines of purity, structure, and elegance.

Jancis Robinson captures the style well: “Flattering and round and well constituted... Long and interesting.”

Spotlight on two standout cuvées:

Domaine Michèle et Patrice Rion Nuits Saint Georges 1er Cru Clos St Marc Monopole 2023 (JM 93-96) – Vibrant purple in the glass, with exciting energy, darker fruit and a hint of chocolate on the nose. Hand-harvested and sorted, then fermented in open stainless steel tanks for around three weeks before 18 months in oak, about 50% new.

Domaine Michèle et Patrice Rion Chambolle Musigny Les Cras 2022 (JM 92-95, 5-Star) – Deep concentrated purple with a more guarded intensity than the Vieilles Vignes, opening into classic violet aromas and a subtle whole-bunch lift. Hand-harvested and sorted, fermented in open stainless steel tanks for around three weeks, then matured 18 months in oak, about 50% new.

🍷 Altaya in Burgundy — A Journey Through Terroir

Beginning in Paris with the celebration of Altaya Wines’ 25th Anniversary at Hôtel de Crillon, our Burgundy journey unfolded through some of the region’s most revered villages, domaines, and vineyard sites — from the historic cellars of Nuits-Saint-Georges to the limestone slopes of Meursault and the quiet vineyards of Vosne-Romanée.

Across the week, we had the privilege of being welcomed by generations of vignerons and domaine families, each sharing their own interpretation of Burgundy through vineyard walks, barrel tastings, and conversations around the table. From the precision and elegance of Côte de Nuits to the layered finesse of Côte de Beaune and the mineral-driven whites of Pouilly-Fuissé, every visit revealed a different facet of the region’s identity.

What remained constant throughout was a shared commitment to authenticity: thoughtful farming, restrained winemaking, and an unwavering respect for place.

To all the domaines, partners, and friends who welcomed us so generously — thank you for your hospitality, your wines, and your stories.
