🍷 Trade Masterclass - Edouard Delaunay



Olivier Hui-Bon-Hoa, Regional Director Asia, joined our trade partners for an afternoon dedicated to the wines of Edouard Delaunay, a Burgundy house whose recent renaissance has attracted considerable attention from collectors and professionals alike.

Established in 1893 and reawakened under the leadership of Laurent Delaunay, the maison has become known for wines that balance precision with authenticity, capturing the nuances of Burgundy through careful vineyard selection and thoughtful élevage.

The tasting unfolded through a series of appellations that illustrated both the breadth of the portfolio and the character of the region. Bourgogne Septembre Blanc 2023 opened with freshness, citrus energy and a subtle saline edge, followed by the texture and refinement of Meursault 2022. The red wines gradually built in depth and intensity, from the bright fruit and immediacy of Bourgogne Septembre Rouge 2023 to the layered complexity of Gevrey-Chambertin Vieilles Vignes 2021.

The final wine, Nuits-Saint-Georges 1er Cru Les Murgers 2019, brought the discussion firmly into Premier Cru territory, combining ripe dark fruit, spice and savoury nuance with impressive structure and persistence.

Throughout the afternoon, conversations extended beyond the glass to the evolution of Burgundy today, examining how a historic maison can honour tradition while continuing to refine its identity for a new generation.

An engaging exchange of ideas, wines, and perspectives that reaffirmed why Burgundy remains one of the world’s most fascinating wine regions.

Few vineyards in the world command the reverence of Volnay's finest premier crus, and Les Taillepieds is widely recognized by top critics as a site worthy of Grand Cru status. Situated on a steep, gravelly slope where sharp stones once "slashed the feet" of historic vignerons, this legendary vineyard covers just over 7 hectares. Within this prized site, Domaine de Montille meticulously farms a premier 1.51-hectare parcel, producing some of the most structural, mineral-driven, and age-worthy Pinot Noir in Burgundy.

Crafted by the late Hubert de Montille and his son Étienne, the iconic estate's visionary patriarch, this wine embodies his lifelong defense of classic, traditional Burgundy. Through a strict philosophy of low yields, minimal intervention, and whole-cluster fermentation, he eschewed modern trends to capture the true, unadorned expression of the terroir with unmatched elegance and depth.

The 1999 vintage, celebrated as one of the greatest and most bountiful red Burgundy vintages of the late 20th century, is renowned for its exceptional fruit concentration, vibrant freshness, and remarkable structure.

Now with over two decades of pristine bottle age, Volnay 1er Cru Les Taillepieds 1999 has entered a spectacular drinking window. It unfolds with an expressive and layered bouquet of ripe red cherries, dried rose potpourri, and autumn leaves, seamlessly woven with classic whole-cluster tea spice and fine earthy complexities. On the palate, the vintage's signature density shines through with an impressive, savory mid-palate depth, balanced by a vibrant mineral drive and firmly structured, beautifully integrated tannins that culminate in a remarkably long, classic finish.

We recently collaborated with the Hong Kong Sommelier Wine & Sake Education Centre to host an exclusive masterclass for WSET Level 3 students.

The session was led by Reilly Keenan, the third generation of , who provided a deep dive into the unique terroir and high-altitude winemaking traditions of the Spring Mountain District. For students analyzing structural balance, intensity, and longevity, tasting mountain fruit offers an excellent benchmark. 🏔️🍇

We tasted four wines from the portfolio, with a particular focus on their proprietary red:

🍇 Keenan Merlot, Spring Mountain District 2019

A hallmark variety for the estate, showcasing the exceptional depth that mountain fruit can achieve. This vintage offers rich aromas of dark plum, black cherry, and subtle spice, complemented by a touch of dried herbs. On the palate, it balances a plush, velvety texture with a firm structure, bright acidity, and a long, refined finish.

🍷 Keenan ‘Mernet’ Spring Mountain Proprietary Red 2019

A seamless, equal blend of Estate Merlot from the historic ‘Mailbox Vineyard’ and Cabernet Sauvignon Clone 337 from the ‘Big K’ vineyard. The ‘Mernet’ (pronounced mare-nay) is deep, structured, and complex. It features aromas of sweet black cherry and blackberry, layered with notes of blood orange, mint, fresh coffee, and cedar. On the palate, it combines a forest-like mountain freshness with powerful tannins and a long, balanced finish built for extended aging.

Guests gathered at MWM Wine School for an intimate tasting hosted by Reilly Keenan, third-generation steward of Keenan Winery, offering a glimpse into one of Napa Valley’s enduring family-owned estates.

Established on Spring Mountain in the late 1970s, Keenan Winery has long been known for wines that reflect the character of mountain-grown fruit — structured, age-worthy and defined by freshness rather than excess. Through four wines spanning Chardonnay, Merlot and Cabernet Sauvignon, the tasting highlighted the consistency of a philosophy that has remained remarkably unchanged across generations.

The 2021 Chardonnay opened with notes of orchard fruit, citrus and subtle pastry nuances, while the 2019 Merlot showed the variety’s hallmark generosity layered with mountain freshness and savoury depth. The Cabernet Sauvignon Reserve 2019 brought greater structure and intensity, revealing blackcurrant, to***co, cedar and graphite, before it concluded with the ‘Mernet’ Spring Mountain Proprietary Red 2019
, a polished blend combining concentration, complexity and finely integrated tannins.

Throughout the tasting, Reilly shared stories of growing up among the vineyards first planted by his grandfather, Robert Keenan, offering a perspective that extended beyond winemaking to the values and continuity that have shaped the estate for nearly five decades.

A wonderful night of conversation, discovery and wines that continue to speak eloquently of their mountain origins.

We recently hosted an insightful staff training session with Reilly Keenan, the third generation of .

Our team took a deep dive into the history of this Spring Mountain estate, which has focused on high-altitude winemaking in Napa Valley since the 1970s. Tasting through the lineup highlighted the distinct structure, intensity, and reputation that define mountain fruit.

We tasted four wines, with two notable highlights from the portfolio:

🥂 Keenan Chardonnay Spring Mountain 2021
A mountain Chardonnay focused on crisp precision. Fermented in oak but with zero malolactic fermentation, it opens with bright green apple, citrus zest, and ripe pear. Sur-lie aging introduces a textured weight on the palate, balanced by a chalky minerality, balanced acidity, and a hint of pastry crust.

🍇 Keenan Cabernet Sauvignon Spring Mountain Reserve 2019
A refined example of mountain Cabernet. This blend (featuring 5% Cabernet Franc) is deep and expressive, with a nose of dark plum, cassis, sage, bay leaf, and to***co. On the palate, it delivers a full mouthfeel with tightly wound, velvety tannins and a distinct graphite edge. Powerful, elegant, and built for long-term aging.

Clerico Barolo Aeroplanservaj 2019

Hailing from the unique terroir of Serralunga d’Alba, the 2019 vintage is a stunning display of power and precision. It reveals a complex nose of dark red berries, crushed stones, liquorice, and floral hints. Full-bodied and beautifully structured, its firm, chalky tannins and vibrant drive promise an incredible life ahead.

Clerico Barolo Ciabot Mentin Ginestra 2021

Sourced from one of the core, historic vineyards of the Clerico family in Monforte d’Alba. The 2021 vintage is structured and complex, opening with aromas of dark red fruits, rose petals, licorice, and mineral undertones. On the palate, it is powerful yet elegant, with tight-knit tannins and a vibrant acidity that promises excellent aging potential.

The Unforgettable Pairing: Barolo & Cantonese Delicacy

A classic pairing of contrasts and complements. The rich, savory umami of the braised abalone and oyster sauce balanced beautifully with the 2020 Barolo del Comune. The wine's bright acidity cut through the richness of the dish, while its notes of dark cherry, earthy forest floor, and refined tannins mirrored the depth of the shiitake mushrooms.

🍷 Sommelier’s Lunch Honouring 30 Years of BOND



To celebrate three decades of BOND, sommeliers gathered at La Petite Maison Hong Kong for a lunch hosted by Max Kast MS, Estate Director of BOND.

Rather than focusing solely on individual vineyard sites, the discussion centred on the passage of time — how great Napa Valley wines evolve, and how site identity remains constant across vintages.

A highlight of the tasting was the opportunity to experience Vecina across two generations. The youthful Vecina 2022 showed impressive structure, dark fruit and mineral tension, while Vecina 2015 revealed the added complexity that comes with bottle age, unfolding layers of roasted coffee, savoury spice and remarkable persistence.

Alongside it, Pluribus 2022 offered a compelling contrast, expressing the concentration and energy characteristic of its steep volcanic mountain site.

Thirty years after the project was conceived, BOND continues to demonstrate that Napa Valley’s finest vineyard sites are capable not only of power and precision, but also of extraordinary longevity.

Our team recently welcomed Max Kast MS, Estate Director of BOND, for an in-depth staff training exploring one of Napa Valley’s most distinctive terroir-driven projects.

Founded by Bill Harlan and Bob Levy, BOND was created with a singular ambition: to identify and bottle vineyard sites capable of standing among the world’s great wines. Rather than focusing on a single estate, BOND brings together a collection of exceptional hillside vineyards, each expressing a unique facet of Napa Valley through Cabernet Sauvignon.

During the session, we tasted two of these remarkable sites. Vecina 2022, from Oakville’s western foothills, showed its signature combination of power and refinement, with layers of blackberry, plum, forest floor and mineral notes framed by finely textured tannins. Pluribus 2022, sourced from a steep volcanic site high on Spring Mountain, revealed a more muscular profile, offering dark berries, cedar, bay laurel and remarkable concentration while maintaining impressive freshness and precision.

What emerged most clearly was BOND’s philosophy that great wines begin with great sites. Though crafted by the same team and guided by the same vision, each vineyard expresses a distinct personality shaped by elevation, exposure and soil.

An insightful session that offered a deeper understanding of how place, rather than winemaking intervention, remains at the heart of BOND’s identity.
