Philosophy and Winemaking Techniques🍷✨
At Domaine Nicolas Rossignol, the philosophy centers on producing wines that authentically express the unique terroir of the region. The estate employs traditional winemaking techniques inspired by biodynamics, emphasizing sustainability and respect for the land.

Key practices include:
Hand Harvesting: Grapes are exclusively harvested by hand to ensure quality. Each bunch is placed in small 8kg boxes to minimize handling and preserve the fruit's integrity.
Meticulous Sorting: After harvesting, grapes undergo a thorough sorting process to eliminate any impurities. This involve using a vibrating table and manual selection by a dedicated team.
Gentle Vinification: The winemaking process utilizes natural yeast for fermentation, with minimal intervention to allow the wine's true character to shine. Techniques such as punch-downs and pump-overs enhance flavor extraction.

Last week, we proudly hosted the Edouard Delaunay Wine Dinner at the exquisite Rosewood Legacy House. The evening began with a sparkling reception, where guests enjoyed crisp Champagne, setting an elegant tone for the night.

Attendees savored a selection of remarkable wines, including the Edouard Delaunay Chassagne Montrachet 1er Cru Clos St Jean 2022, with only 272 bottles produced each year, and the Edouard Delaunay Gevrey Chambertin Vieilles Vignes 2019, limited to 4,526 bottles annually. A highlight was the Edouard Delaunay Corton Charlemagne Grand Cru 2020, served at the Élysée Palace during a sumptuous state dinner honoring Chinese President Xi Jinping in 2024, celebrating 60 years of diplomatic relations. This wine is crafted with meticulous attention, using handpicked grapes and indigenous yeasts, with only 1,096 bottles produced each year, showcasing the Maison's dedication to quality and sustainability.

Olivier Hui-Bon-Hoa, the Regional Director for Asia at Edouard Delaunay, shared captivating stories about the family’s rich history in wine, tracing back to the 19th century in Burgundy. We recently had the pleasure of hosting an unforgettable evening with Antoine Jobard, featuring a delightful wine lunch at Murasaki and a wine tasting at New World Millennium, an insightful trade masterclass, and a sumptuous wine dinner at the Anne-Sophie Pic Cristal Room.

Antoine shared the artistry behind his craft, emphasizing the winery’s commitment to organic farming. With horses plowing the vineyards and no chemical treatments, each vine flourishes naturally, reflecting the vibrant terroir of Meursault.

He captivated attendees with details of his winemaking process, explaining how fermentation begins with indigenous yeast and aging occurs in traditional Burgundian oak barrels, using only 12-15% new wood to enrich the wines with complexity and depth. Lucien Le Moine | Event Recap

We were thrilled to host an engaging event with Rotem Saouma, the owner and winemaker of Lucien Le Moine. 🍷 The day featured staff training, a trade masterclass, and a delightful wine tasting.

Participants were excited to interact directly with Rotem, gaining insights into the winemaking process. She emphasized the importance of double decanting ⏳ their wines, allowing CO2 to escape and enabling the wine to fully express itself. Even a few minutes of decanting can enhance the tasting experience. Rotem also shared that Lucien Le Moine focuses on the best crus from each village, producing only 1 to 3 barrels per cru (300 – 900 bottles). This limited production ensures that each barrel is perfected without blending, showcasing the true character of the wine. Attendees appreciated learning about aging on lees, unique oak sourcing, and the natural fermentation process. Overall, the event was a great success, leaving everyone inspired by the artistry behind Lucien Le Moine wines! 🎉

What an incredible day with GAJA! We had the pleasure of hosting a fantastic Staff Training and Trade Masterclass, led by dedicated GAJA Sales Manager, Francesco Giardino. 🍷

Francesco shared a wonderful insight: “Every vineyard is treated as a single universe.” This beautifully emphasizes the uniqueness of each vineyard and ties in perfectly with the various branches and their corresponding terroirs.

The day featured two remarkable events, showcasing how each wine reflects its individual vineyard. In the Staff Training, we explored IDDA, which beautifully captures the essence of Sicily, and Pieve Santa Restituta, highlighting the rich flavors of Brunello di Montalcino. We also delved into the exquisite GAJA Barbaresco from Piedmont during the Trade Masterclass, further illustrating the commitment to quality and craftsmanship that GAJA embodies. We are proud to note that GAJA has been recognized as No. 2 in The World’s Most Admired Wine Brands 2025, published by Drinks International, reflecting their dedication to excellence.

We began with a training session led by François, the right-hand man of the winery. where team members explored the estate's philosophy and winemaking techniques, highlighted by the exceptional Musigny Grand Cru 2014 🍷. We were thrilled to taste this remarkable wine during both the staff training and Trade Masterclass, showcasing the pinnacle of Domaine Jacques-Frédéric Mugnier's artistry! This was followed by a Trade Masterclass, where industry professionals tasted and learned about the estate's exquisite wines, sparking lively discussions.

The week also included a delightful Sommelier's Lunch, fostering meaningful conversations about the wines, especially the exquisite Bonnes Mares Grand Cru 2021 🍷.

We concluded with a Wine Masterclass, where participants enjoyed a curated selection of wines along with some canapés, learning about the unique terroirs and winemaking practices that define the estate.

What a fantastic evening we had last Thursday, March 20, 2025, at La Paulée by Altaya Wines, held at The Gallery Rosewood Hong Kong! Our BYOB dinner turned into a vibrant celebration of Burgundy wines, filled with laughter, good food, and, of course, exceptional bottles shared by our amazing guests.

We were thrilled to host four incredible Burgundy producers: Jacques-Frédéric Mugnier, Lucien Le Moine, Antoine Jobard, and Ballot Millot. Their passion and expertise truly elevated the night, showcasing the richness and diversity of Burgundy’s finest offerings.

Domaine Marquis d’Angerville | Staff Masterclass

For over two decades, Altaya Wines has collaborated closely with Domaine Marquis d’Angerville, a winery with a rich history spanning more than 200 years. We were thrilled to host Mr. Guillaume d’Angerville, the owner and winemaker of the Domaine, who shared insights about the 2021 vintage and the fascinating history of this esteemed family winery.

“Where is my wealth? My wealth is in my land.” Since taking over from his father in 2003, Guillaume has dedicated himself to preserving the family’s legacy while achieving significant milestones. He recognized the essential role of the land in winemaking and transitioned the vineyards to biodynamic practices. Guillaume explained how this shift has impacted the soil’s life cycle and how the Domaine adapted, especially during challenging climatic conditions. “Let the terroir speak as much as possible,” he emphasizes. In his wines, he strives to capture the unique characteristics of each terroir, believing that the flavors originate from the berries themselves. This philosophy leads him to destem the fruit and allow for a gentle extraction process.

The experience was a deep dive into the art of winemaking, reminding us that true excellence in wine comes from a profound respect for the land and its heritage.

Domaine des Lambrays | Staff Masterclass
We were honored to host Mr. Jacques Devauges, the Estate Director, to guide us through a tasting of the 2022 vintage from Domaine des Lambrays.

Since joining the Domaine in 2019, Jacques has implemented significant changes, expanding the vineyard from 11.9 hectares to 15.7 hectares and achieving biodynamic certification in 2020. While adhering to classical winemaking methods, he emphasizes precision throughout the process, resulting in wines that embody elegance, power, and longevity.

During our tasting, we enjoyed four new cuvées: Morey St Denis 1er Cru Clos Sorbe, Morey St Denis 1er Cru Clos Baulet, Vosne Romanee 1er Cru Beaux Monts, and Nuits St Georges 1er Cru Richemone. This vintage is particularly special as it is the first to be certified organic, utilizing the new cellar with custom wooden vats, with all wines vinified by gravity.

We also had the pleasure of tasting two 1er Crus from Puligny Montrachet: Les Folatières 2022 and Clos du Cailleret 2022, showcasing the distinct characteristics of their origins. Jacques highlighted the diverse terroirs of the grapes, and we appreciated how these nuances are beautifully reflected in each glass. It was truly an enlightening experience!

Pierre-Yves, Emmanuel's nephew, joined the team after gaining valuable experience with Armand Renaud and Jean-Marc Boillot.

Domaine Humbert spans about 7 hectares, including vineyards in Charmes-Chambertin Grand Cru and Lavaut Saint-Jacques Premier Cru. With grapevines typically over 50 years old, they engage in green harvesting to enhance grape quality. The grapes are hand-harvested and stored in temperature-controlled barrels, with natural fermentation following some de-stemming. Their wines are aged in 100% new oak barrels for 16 to 18 months, resulting in refined and captivating profiles.

A standout moment was tasting the Charmes Chambertin Grand Cru 2020, with a limited production of just 1,000 bottles!🍷
