Each weekend this May I could be found waist deep in Jamaica bay on the hunt for my favorite dinner - the striped bass. While I haven’t caught any keepers this year, I’m patiently waiting to try out my favorite elevated bass recipe. (Striped bass can also be bought at your local fish market)

This recipe combines homemade za’atar with thin slices of raw striped bass. The brightnes and citrus notes from the sumac combined with herby fennel and sweet chillies liven up the raw fish.

Socaire was an easy choice. Nutty, pear like fruits with a dash of salt and herbality on the finish melded beautifully with the bright za’atar and tender bass!

Our Joseph Jibril Sauvignon blanc is perfect for lovers of green and citrusy wines. Jalapeño-lemonade vibes. Vibrant yellow straw in color with a slight green hue. The aromatics are jalapeño, lemon rind, gooseberry, grapefruit and kiwi. On the palate, a mix of tropical fruit, citrus and honeysuckle and a crisp lemon drop finish.
