Diageo 推出的「花與動物 (Flora & Fauna)」系列,其特色在於每款酒標上都印有一種代表該酒廠的動物圖案。此系列提供了 Diageo 旗下那些較少發行 Official Bottling 威士忌酒廠的機會,因這些酒廠所生產的原酒,許多時候都被用於調和威士忌之用。

Flora & Fauna 系列中 3 款帶外盒的酒款於 The Rare Malt 上架,分別是 Benrinnes 15 年、Dailuaine 16 年和Teaninich 10 年,價格非常相宜,適合收藏、送禮及自用。

Diageo’s “Flora & Fauna” series is characterized by each bottle’s label featuring an animal emblem representing the distillery. This collection offers a chance to experience whiskies from Diageo distilleries that seldom release Official Bottlings, as their spirits are frequently used for blended whiskies.

【Chorlton Whisky 2025】

Chorlton Whisky 在 2025 年的第一批作品,今次 3 款都是來自 Highland 的酒廠,分別有 IB 中不常見的 Balblair 和以 First-fill Bourbon 桶熟成的 Glen Garioch,而 Tullibardine 就以陳年過泥煤威士忌的 Barrique 桶熟成!

Glen Garioch 帶有清新優雅的香氣,有明顯檸檬草、柑橘、梨等的香味,伴有麥芽香和一絲花香。入口充滿柑橘香甜,口感柔和同時 Juicy。尾韻留有檸檬皮香和油潤的口感。

Tullibardine 的香氣層次很有驚喜,像充滿忌廉的咖啡蛋糕、果仁、拖肥糖、一點香蕉和甜橙汁的香氣,香甜味後帶有一絲柔和的煙燻味。入口各種果甜、糖果甜味爆發、慢慢轉為甘草糖味和帶一點咖啡香味。尾韻先有微微 Funky、再轉為香料感和終於登場的泥煤味。

Balblair 的香氣清新,先有蜜糖、檸檬皮和石榴香,靜置數分鐘後散發出青蘋果香。入口非常甜美,帶有啤梨、番石榴等果香味,慢慢再轉為柑橘皮味。尾韻留有柑橘甜味和一點玉桂香料感。

【Ardbeg 17 YO】

相隔多年,曾於 2004 年停產的 Ardbeg 17 年,由 Dr. Bill 和 Master Blender, Gillian Macdonald 一同重新調配再次推出,以 The Legend Returns 作為招徠。和當年的 Ardbeg 17 一樣以溫柔的泥煤味為賣點,以 40% 酒精度推出,這個酒精度代表 Ardbeg 再一次罕有地使用了冷凝過濾。

Distillery Manager, Colin Gordon 形容這支 Ardbeg 的香氣帶有花香、礦物感和一點草本香氣,伴有一絲香甜味。

After many years, the Ardbeg 17 Year Old, which was discontinued in 2004, has been re-released. This new version was created by Dr. Bill and Master Blender, Gillian Macdonald, with the slogan “The Legend Returns.” Like the original version, this Ardbeg 17 Year Old features gentle peat smoke. Bottled at 40% ABV, which indicates that Ardbeg has once again rarely used chill-filtration.

Distillery Manager, Colin Gordon, describes this Ardbeg as having a floral, mineral, and a hint of herbal notes, accompanied by a sweet undertone.

【Secret Islay 27 Year Old】

雖然是一款 Secret Islay,但眼利的朋友一定知道酒標上的酒廠,配上這一個角度,已暗暗指出是一支來自 Laphroaig 的 27 年威士忌,比起 OB 性價比極高。

While it’s labeled as a Secret Islay, keen eyes will surely recognize the distillery on the label. Paired with this particular angle, it subtly hints that this is a 27-year-old whisky from Laphroaig, offering exceptional value compared to official bottlings.

Tasting Note by Whiskynotes:

Nose: seaweed and mild iodine, with hints of bandages and rusty nails. There’s a sweet fruitiness underneath, mostly lemon juice and grapefruits, maybe melons and a hint of vanilla too. Then back to wet cement and dried herbs, with smouldering ashes in the background.
Mouth: sweet onset, with honeyed fruits like peaches, guava and creamy lemons. Some dried maritime notes, iodine, mint and herbal smoke. Chalky touches. Beach pebbles and subtly smoked tea.
Finish: long and slightly sharper again. Earthy, with some oak char, herbs and zesty notes.

【再一次復產的 Laphroaig 18】

今版的 Laphroaig 18 年在 2024 年中再一次復產,加入到酒廠的核心酒款中,和 2 款舊版一樣都是 48% 酒精度推出。以全 Bourbon 桶熟成超過 18 年,帶有標誌性的 Laphroaig 煙燻風味和 Bourbon 桶帶來的雲尼拿和水果香氣。

官方品飲筆記:
聞香:煙燻泥煤和雲尼拿甜的香氣。帶有柔和的拖肥糖和燈籠果的香氣。
口感:辛辣的肉桂和新鮮出爐的蘋果撻的風味。
尾韻:飽滿的果香、新鮮薄荷草本氣息,以及泥煤風味。

The current release of Laphroaig 18 Year Old was reintroduced to the distillery‘s core range in mid-2024, and like two previous releases, it is bottled at 48% ABV. Matured for over 18 years entirely in Bourbon barrels, it features the signature Laphroaig smoky character alongside vanilla and fruit notes from the Bourbon casks.

Official Tasting Note:
Nose: Smoky peat and sweet vanilla aromas. Notes of soft toffee and gooseberry.
Palate: Flavours of spicy cinnamon and freshly baked apple tart.
Finish: Full-bodied fruitiness alongside herbal notes of fresh mint and peaty notes brings the whisky to a finish.

【藝術品般的 Grappa】

來自義大利 Piedmont 產區的頂級 Grappa,是一款經過木桶熟成、帶有濃郁的果香和柔順的口感的 Grappa。
(Grappa 是一種以釀造葡萄酒後的葡萄渣蒸餾而成的意大利烈酒)

這款 Grappa 的獨特之處在於它選用來自 DOCG 等級 Moscato d’Asti 產區的優質葡萄果渣作為原料,而這些葡萄來自 Neive、Trezzo 和 Treiso 等著名的 Moscato 酒莊。再以傳統的直接火源間歇式蒸餾法製作,這種古老的方法能保留 Moscato 葡萄的特色香氣。

最特別的是,酒標圖案是由已故莊主 Romano Levi 繪製,帶有他樸實、充滿童趣的藝術風格,也被稱為 Wild Art,使每一瓶 Grappa 都像是一件小小的藝術品。除了圖畫,Romano Levi 還會在酒標上親手寫下詩意的短語或簡單的字句。

A premium Grappa from the Piedmont region of Italy, it is a barrel-aged Grappa with intense fruity aromas and a smooth palate. (Grappa is an Italian spirit distilled from the pomace after winemaking.)

What makes this Grappa distinctive is its use of high-quality pomace (vinacce) sourced from DOCG-level Moscato d‘Asti vineyards, with grapes originating from renowned Moscato-producing villages such as Neive, Trezzo, and Treiso. It is distilled using the traditional discontinuous method with direct fire, an age-old technique to preserve the characteristic aromas of the Moscato grapes.

Most notably, the label artwork is drawn by the late owner, Romano Levi, showcasing his unpretentious and whimsical artistic style, sometimes referred to as ”Wild Art.“ This makes each bottle of Grappa a unique piece of art. In addition to the drawings, Romano Levi would also personally inscribe poetic phrases or simple words onto the labels.

【Old School Malt #1 & #2】

由 Signatory Vintage 作 Blending 的一款 Blended Malt Whisky,用了 104 間蘇格蘭酒廠的麥芽威士忌作調和,比較搶眼的有 Brora、Port Ellen、Rosebank 等等早已”升仙”的酒廠,當然比例有多少就無法得知了。這支酒幾乎混合了整個蘇格蘭大家較熟悉、較老而有製作麥芽威士忌的酒廠,難怪取名為 Old School Malt。而 31 年的熟成年期中至少有 26 年是於 Sherry Cask 中熟成,最後以 43.5% 酒精度只推出一共 1148 支。

Signatory 繼第一版的 Old Scholl Malt 後推出的”熱帶水果版”,雖然第二版同樣是 Old School,但不再是 Blended Malt 而是以 Single Malt 推出的蘇格蘭威士忌。第一版用作調和的 104 間酒廠都幾乎一一列在後酒標,但今次第二版卻不能公開是來自哪家酒廠,反差相當大!今個版本以第 2 次使用的 Oloroso Sherry 桶熟成超過 45 年,再以 43.3% 酒精度推出。

官方品飲筆記:
這瓶出色的威士忌將你帶入熱帶天堂。香氣帶有熟芒果、焦糖菠蘿、蜂蜜雲尼拿、烤椰子的味道。一款 ”Old School” 的威士忌,尾韻清新悠長、果香四溢,最後以柔和的橡木香料結束,讓你聯想到遙遠的海岸!

【Michter’s Toasted Barrel Finish】

於 2014 年秋季首次推出的 Toasted Barrel Finish,將已經熟過的 Michter’s Kentucky Straight Bourbon 以經獨特處理的木桶中再次熟成。這個木桶由風乾 18 個月的木材組裝而成,並經過烘烤 (Toasted) 但未經燒焦 (Charred) 處理。因法律上波本威士忌只要求在以全新的燒焦木桶 (Charred Barrel) 中熟成,而烘烤木桶 (Toasted Barrel) 是 Michter’s 特意為增加風味而採用的木桶。而長時間風乾的木材可減少帶有的單寧,能降低威士忌吸收過多的苦澀味。

帶有像營火和肉桂香,伴有胡桃和糖漬水果的風味。尾韻悠長,帶有烤熟梨、雲尼拿和棉花糖的餘味。

First introduced in the Fall of 2014, the Toasted Barrel Finish involves a second maturation of Michter’s Kentucky Straight Bourbon in custom made barrels. These barrels are assembled from 18-month air-dried wood and then toasted but not charred. As legal requirements for bourbon only mandate maturation in new charred oak barrels, the toasted barrel is specifically utilized by Michter’s to enhance the flavor profile. And the extended air-drying process of the wood aids in the reduction of the tannins present, which can minimize the over-extraction of bitter notes by the whiskey.

With notes of campfire and cinnamon, with pecan and candied fruit. Lingering finish of baked pears, vanilla, and marshmallow.

【Single Cask W.L. Weller】

W.L. Weller 是由 Buffalo Trace Distillery 釀製的波本威士忌,Weller 系列以 19 世紀著名釀酒師 William Larue Weller 的名字命名,他以小麥替代黑麥這罕見的穀物配方製酒而聞名。和已停產的知名 Pappy Van Winkle 同樣作為採用小麥的波本威士忌,連製作配方都有高度相似性,所以 Weller 被不少人視為前者的高性價比替代品,全因 Van Winkle 和 W.L. Weller 公司有著非常深的淵源。

Antique 系列是單桶版本的 Weller,而 107 是指化表酒精度的 Proof,相當於 53.5%。

W.L. Weller is a bourbon whiskey crafted by Buffalo Trace Distillery, part of the Weller series, named after the renowned 19th-century distiller William Larue Weller, known for using wheat instead of rye in his mash bill. As a wheated bourbon with a highly similar mash bill to the now-discontinued and highly sought-after Pappy Van Winkle, Weller is considered by many to be a more accessible and affordable alternative. This perception exists largely due to the deep historical connection between the Van Winkle and W.L. Weller companies. The Antique series refers to the single barrel expressions within the Weller brand, and the ’107‘ indicates the proof, which is equivalent to 53.5% alcohol by volume (ABV).

Sweet and unusual floral notes and coupled with vanilla. The taste is very well balanced with sweet fruit notes, strong vanilla undertone and sharp spicy tones, with a cinnamon finish.

【不是溝可樂的 Jack Daniel’s】

Jack Daniel’s 在不少朋友眼中都只是一支用來溝可樂的威士忌,由其是常見的 No.7。但今次的 10 年酒款是 Jack Daniel’s 近百多年來首次重新推出有標示年份的威士忌,請先不要急著用來溝可樂。

Tennessee Whiskey 是美國威士忌中少有指定州 (田納西州內)才能生產的威士忌種類,原料和 Bourbon Whiskey 相似都是以粟米為主,最大分別點是 Tennessee Whiskey 的 Lincoln County Process:即是在熟成前必須經過糖楓木炭進行過濾。

而這款自 2021 年開始限量發行的 10 年 Jack Daniel’s 灸手可熱。最初只在美國國內發售,直到第 3 批次才開始在其他國際市場少量發售。帶有溫暖的拖肥糖和柔和的水果香氣,尾韻悠長,帶有香甜煙草和香料的味道。

For many, especially the ubiquitous No. 7, Jack Daniel’s is often relegated to a whiskey for mixing with cola. However, this 10-year-old release marks Jack Daniel’s relaunching age-stated whiskey in over a century, so perhaps hold off on the cola this time.

Tennessee Whiskey is a unique category within American whiskey, with production restricted to Tennessee. While its mash bill, like Bourbon, is corn-dominant, the key distinction lies in the mandatory Lincoln County Process: filtration through sugar maple charcoal before aging.

This 10-year-old Jack Daniel’s, which began limited releases in 2021, was highly sought after. Initially available only in the US, until the batch 03, it started to be released in small quantities in other international markets. It features notes of warm butterscotch and soft fruit, with an incredibly long finish of sweet to***co and spice.

【二兔 Sparkling】

Sparkling 是二兔的熱門酒款,採用瓶內二次發酵的方式產生細緻而持久的氣泡,類似於香檳的釀造工藝,帶來柔和且舒適的口感,而不是透過注入二氧化碳去生產氣泡。和以往版本一樣是生酒及薄濁酒,即是瓶底帶有一層酒粕,一開瓶時氣泡就會將酒粕擴散到全支清酒!

香氣帶有明顯水果香甜,口感柔和,有米香和旨味同時帶有清爽活潑的氣泡感,非常適合開始轉熱的天氣中飲用!可配搭燒烤、火鍋、炸物等等重口味料理!

** 有飲過以往版本的朋友會留意到,今年酒標其中一隻兔子轉為抱著炸彈的猴子。打開二兔 Sparkling 時請格外小心,因為強勁的氣泡會像那個炸彈一樣爆開,將瓶蓋高速飛彈上天花板。

Sparkling is a popular sake from Nito, crafted using the traditional in-bottle secondary fermentation method to create fine and persistent bubbles, similar to the production of Champagne. This results in a soft and comfortable mouthfeel, unlike the carbonation achieved by injecting carbon dioxide. Continuing the tradition of previous releases, this year’s version is also a Nama (Unpasteurized) and Usu-Nigori (Slightly cloudy) sake, meaning it has a layer of sakekasu (Rice sediment) at the bottom of the bottle. Upon opening, the bubbles will disperse this sediment throughout the sake!

The aroma offers fruit notes, while the palate is soft, presenting both rice fragrance and umami, complemented by a refreshing and lively effervescence. It’s an ideal choice for the increasingly warm weather! This sparkling sake pairs well with rich and flavorful dishes such as barbecue, hot pot, and fried foods!

** For those who have enjoyed previous versions, you may notice that this year’s label features one of the rabbits replaced by a monkey holding a bomb. Exercise extreme caution when opening Nito Sparkling, as the powerful carbonation can cause the cap to explode off like that bomb, potentially hitting the ceiling!
