Next March we're taking six people north. Edinburgh and the Indy Bottler Festival. A closed-distillery tasting at Gordon & MacPhail — whisky that literally cannot be made again. An evening with Little Brown Dog, the reigning Independent Bottler of the Year. Golf and single-cask tastings at Ballindalloch, Scotland's only single-estate distillery.

Then the top of the mainland: a full working day at 8 Doors in John O'Groats. You mash. You run the stills. You fill a cask — and the six of you own it.

57.4% ABV. 1st fill bourbon barrel. $115.

Benrinnes is one of the hardest Speyside distilleries to find as a single cask. Most of it disappears into blends. Finding one fully matured in 1st fill bourbon is even rarer.

We requested this in the first round with Finn Thomson. It wasn't available then. It is now.

53.2% ABV. 1st fill bourbon barrel. $155.

Independent bottlers love Mannochmore for its sweet, fruity character. You'll usually see it finished in wine casks or sherry. It's a crowd-pleasing distillery that pairs well with everything.

This is different. Fully matured in a 1st fill bourbon barrel. No finish. No wine influence. Sixteen years of Mannochmore with nothing layered on top of it. We haven't seen one done this way before and it's delightful.

53.3% ABV. Ex-bourbon hogshead. $115.

Blair Athol almost never shows up as an independent single cask. Most of it disappears into blends. Finding one in refill bourbon is even rarer. No sherry influence, no wine finish. Just the distillery character on its own.

Here's the thing. It's been pouring this at tastings and it keeps coming out as the favorite. Over older bottles. Over higher price points. People aren't expecting it and then they can't stop talking about it.

This 12 Year Old was the fastest selling Finn Thomson release we've had. It sold out before most people even saw it.

There isn't more.

But a 10 Year Old single cask is coming next month. Same distillery. Same waxy, coastal character. Cask strength at 54.6% from an ex-bourbon hogshead. 42 bottles.

56.0% ABV. Colombian virgin oak finish. Strathmill. Coming back in Stock

Colombian oak. Not American. Not European. Grown at altitude in the Andes with a completely different tannin profile. It's one of the rarest finishing woods in Scotch whisky and you almost never see it on an independent single cask.

Strathmill is a distillery most people will never try outside of a blend. 15 years at cask strength in wood this unusual is not something you come across twice.
