Ramp Vodka Sauce
• Ingredients:
1. 1 Ib local sfoglini pasta
2. kosher salt
3. 1/2 medium yellow onion, very finely chopped
4.2 garlic cloves, smashed and minced
5.2 oz grated pecorino cheese, plus more for serving
6. 2 tbsp getgraza olive oil
7. 4.5 oz Cento organic double-concentrated tomato paste
8. 1/2 tsp spicewalla red pepper flakes
9. 2 oz coopersdaughterspirits Ramp Vodka
10. 3/4 cup of highlawnfarm heavy cream
11. basil leaves for a garnish
2, Instructions:
Sep 1: Fill a large pot 2/3 of the way with water and a heavy sprinkle of kosher salt. Turn on high to bring to a boil. This will be for cooking your pasta.
Step 2: In a dutch oven or heavy pot add 2 tbsp of olive oil over medium heat
Step 3: Add two minced garlic cloves and half of a finely diced medium onion
Step 4: Cook onion and garlic together until golden, about 10 minutes.
Step 5: Add 1 (4.5-oz.) tube of double-concentrated tomato paste and ½ tsp of crushed red pepper flakes.
Step 6: Cook while stirring often until the paste is darker red, evenly coats the onion and garlic, and starts to lightly brown on the bottom of the pot- about 5 minutes.
Step 7: Add 2 oz Cooper's Daughter Ramp Vodka to deglaze the pan. Be sure to scrape the bottom of the pan. Reduce from medium to low heat.
Step 8: Using a glass measuring cup with a handle (to avoid burnt hands), ladle out 1/4 cup of the salted boiling water that you will use to boil your pasta.
Step 9: Add 3/4 cup of heavy cream to the water.
Step 10: Slowly drizzle the hot water and cream mix into the ramp vodka sauce, stirring the entire time. A smooth sauce should form. Remove from heat.
Step 11: Boil your pasta until al dente.
Step 12: About 1 minute before draining the pasta water, ladle out 1/2 cup of the pasta water and set aside.
Step 13: Strain the pasta and transfer to the pot with the ramp vodka sauce. Add the 1/2 cup of pasta water and gently combine.
Step 14: Gradually add about 2 oz of grated Parmesan or Pecorino, stirring gently until the cheese is melted.
Step 15: Season with salt as needed
Step 16: Serve immediately, top with grated cheese and torn basil leaves
