New beers are cold and ready to be drank!

Young Blood is running down a dream with their Deforest grand opening today, so it’s fitting to have cans of Tom Petty Circa 1991 back. Half Acre continues to pull absolute legends for their Daisy Cutter collabs, and this year doesn’t let the foot off the gas. Maine-grown wheat is Allagash’s contribution of locality, and it’s a total crusher. Daisy Cutter Evergreen is an old school West Coast IPA for old school West Coast IPA drinkers. Dovetail’s Saison is an homage to Dupont and just as versatile with whatever you’re putting on the table this weekend. Hubbards Cave with a 5.5% all-Citra West Coast Pale Ale? Say less. And last but not least, the first case of Scaldis in maybe a decade? Looking forward to revisiting some of those formative beer memories of diving deep into the bottle list at Brasserie V. Thirsty Thursday: Pinot Evil, Hear No Evil, Speak No Evil

Sanctum ‘Lisica’ Pinot Noir 2022
Lipoglav, Lower Styria (Štajerska), Slovenia

Sanctum Winery is located in a small town in the hilly region of Slovenia’s Štajerska region. There is a rich winemaking legacy here thanks to the Carthusian monks who established a monastery in the area in the 12th century. They brought both Burgundian winemaking methods and grapes, Chardonnay and Pinot Noir. The founder of Sanctum, Marko Podkubovšek, founded the winery after Slovenia’s independence in 1991 at a time when the region was struggling to find its viticultural identity. He harkened back to the traditions of the Carthusian monks and began crafting wines using the same minimal-intervention methods. His wines are elegant, precise and reminiscent of the great wines of Burgundy with a Slovenian expression, not to mention a fantastic value.

Marko’s ‘Lisica’ is 100% Pinot Noir. Clocking in at 12.5% ABV, this is a light expression due to the cool climate. Notes of cranberry, red currant, savory herbs, earthiness, and minerality make up the complex palate. This wine will pair beautifully with a host of dishes, especially roasted or grilled chicken and tuna steaks, sausage, or goulash.

We are incredibly excited to announce our second ever in-store beer event at the Steve’s Back Bar, An Evening With Dovetail Brewery!

Located in the heart of Chicago’s Ravenswood neighborhood, Dovetail Brewery has an unwavering commitment to continental European brewing methods. Founded by master brewers Hagen Dost and Bill Wesselin, the brewery is celebrated for its technical precision to create world-class lagers and beyond.
On June 11th, we’ll welcome Dan Modica, Dovetail’s national sales director, as he takes you on a brewery tour from our very own back bar. We’ll not only taste through several of Dovetail’s beers, but the ingredients that make them. This will include a few types of malt as well as different types of water that are used for different styles of beer to honor their historic flavor profiles. Dan will also walk you through the traditional Franconian processes they use to brew their beer, and explain why it’s worth the extra effort. We’ll also have a giveaway with some TBD brewery swag to take home. We’re super excited to dive deep into Dovetail’s history and brewing history with one of our favorite breweries, and we hope to see you there!

Thirsty Thursday: The Best Things in Life are Gris

Lorraine, France is situated on the French-German border on the Moselle River. To its east in Germany lies the Mosel region with its world-class whites, and to the west, Champagne. It shares both areas’ cool climate and the Mosel’s slate soils. It’s a recipe for an excellent winegrowing region—so why isn’t it more well-known? The answer is complicated, but between phylloxera in the 1880s and back-to-back World Wars where Lorraine became quite literally a battleground, the vineyards in the area were all but decimated. It has taken decades to bounce back, but Maison Lelièvre has been at the forefront of its return to the winemaking stage. Started in 1972, it is now run by the founder’s grandsons David and Vincent. Their focus on organic farming and showcasing the terroir of the Côtes du Toul, Lorraine’s most significant sub-region, has yielded wonderful results.

Lelièvre’s Gris Pique-Nique is a super light rosé of Gamay and Pinot Noir. Interestingly, it is a multi-vintage blend, meaning the new vintage is blended into reserve vintages to maintain consistency year over year. It is designed, as the name and label suggest, for on-the-go enjoyment, with a flip-top that’s easy to open anywhere! The wine is tart, crisp, and light-bodied with notes of salted pink grapefruit, red currant, cranberry and minerality. Suggested food pairings include French picnic classics like jambon-beurre, pâté or rillettes, and funky cheeses to match its slightly rustic character. Smoked salmon or trout, especially on a bagel with cream cheese and capers, would also make an excellent accompaniment.

New beers are here and we’ve got some doozies for the long weekend. Front of mind is the return of Cuvée des Jonquilles, a perfect little corked and caged Biere de Garde from a picturesque French brewery on the Belgian border. Delicate, floral, and effervescent. Stateside, Chicago’s has sprinkled their Polish-influenced Grodziskie into distribution for the first time. It’s a rarely seen smoked wheat beer that is bright, citrusy, and refreshing with low ABV. ’s Fist City is also making it’s cooler door debut here. Just arrived! Our new Steve’s Private Barrel Four Roses OESQ Cask Strength Bourbon is an absolute stunner! Bottled at 57.9% ABV, this whiskey opens with a sweet, bright fruity nose layered with notes of vanilla confection, cinnamon and delicate floral aromas such as honeysuckle. The palate is beautifully balanced with rich caramel sweetness, gentle citrus, a varnished oak character with lifted floral esters and invigorating wood spice. Rich, expressive, and dangerously easy to come back to for another sip!
