We've got some NEW CHEESE from Neal's Yard Dairy this week!

For those who don't know, Neal's Yard Dairy brings us the best of British and Irish cheeses! They work with individual dairies and select the best of the best of the wheels they make to age in their own cellars and then sell to the rest of us!

New Cheeses:

Coolea - County Cork, Ireland - Aged Gouda from Willems Family Farm!

Yoredale Wensleydale - North Yorkshire, England - Clothbound raw cow's milk cheese from Curlew Dairy!

Stichelton - Nottinghamshire, England - Raw cow's milk blue from Stichelton Dairy!

Montgomery's Cheddar - Somerset, England - Traditional clothbound cheddar that's not new to the shop, but we went the whole 50lb wheel this time! Lots of cheddar to go around!

Gubbeen - West Cork, Ireland - Semi-soft washed rind cows milk cheese from Gubbeen Farms!

The *NEW* menu for our Fall/Winter Cheesemonger Guided Tasting has LAUNCHED!

With our Cheesemonger Guided Tasting, one of our cheesemongers will take you through 5 courses dedicated to talking about different flavors in different cheeses. We'll talk about the cheesemaking process, styles of cheese, and the stories behind these selections!

We also offer various drink pairings and a charcuterie pairing to go along with each course if you wanted to enhance the experience even further!

We are growing our leadership team and hiring an Assistant General Manager who provides day-to-day floor leadership across retail, dining, beverage service, and event space.

Here at Beautiful Rind, we believe great cheese should be for everyone. Our goal is to make it accessible to all people, whether you’re a lifelong enthusiast or tasting your first washed rind, and that starts with a friendly, welcoming atmosphere where nobody feels out of place or judged. It's tiiiiime!

If you're looking for a ~spoooooky~ cheese this Halloween season, we have some extra scary wheels of Moses Reaper from Jasper Hill Farm in the case!

Creamy, mushroomy, ash lined and very frightening, this cheese only graces us with its presence once a year, so come on in!

We've got new cheese in the case!

You've got to come in and try some of our new cheese from Quesos Navarro . They are traditional Mexican cheesemakers based in Jalisco, Mexico. What started as an ambitious venture into the sale of ice in Tepatitlán, soon became an ambitious venture into dairy and eventually cheesemaking!

Both of these cheeses are great for melting and bring their own unique flavors and textures to different dishes. Where Queso Oaxaca is a bit saltier and higher in moisture (great for a perfect cheese pull), Menonita is denser and nuttier. We encourage you to add either or both of these cheeses to your next Mac and Cheese, Pizza, Quesadilla, or served as is on your next cheese board!

This month, our fundraiser will take the form of a Midwest Rinds & Midwest W**es guided tasting & class!
The Midwest is about neighbors helping neighbors and if we can eat some cheese & drink some w**e while doing so, all the better!

$25/ticket for this class will go directly to ICIRR The Illinois Coalition for Immigrant & Refugee Rights. ICIRR is dedicated to promoting the rights of immigrants & refugees to full and equal participation in the civic, cultural, social and political life of our diverse society.
