Cognac is a brilliant spirit, bright and fresh in youth, where it's brilliant in our pop-up cocktail bar, as well as majestic in its supreme maturity. Where else can you taste something from 1820 that is still thrillingly alive?

The w**es of Jerez are some of the most gastronomic that exist. Some w**es get called, euthemistically, foodie w**es, which means they need something to soften them. That is empathetically not the case with sherry. These are w**es that are brilliant on their own but which can be dazzling with food, and with some of the least w**e friendly foods at that. 🍷

We'll be celebrating that quality in this more informal tasting as well as seeing how these w**es can be shaken, stirred and shaped into cocktails too.

Named for one of the great ghost stories in Scotch wh**ky, where the Islay crofter Lachlan Bàn was so spooked by the sight of a headless horseman riding away from his house on a stormy night that he threw away the unexplained bottle of wh**ky left for him upon his return, fearing it an ill-omened thing. 🐎

Luckily, this 22-year-old Bowmore is a rather less fearsome spirit, possessed instead by the distillery’s classic notes of tropical fruit, sea air and beach-bonfire smoke. A rare independent bottling of Bowmore, especially at this age, and one we are very proud of.

Based in the heart of Bordeaux, Maison Lineti is a French distillery focused on bringing the science and techniques used in fine w**e to single malt wh**ky. It has centred their wh**ky ethos on the pillars of creativity, selection and technique, rather than age and tradition. 🍷

Releasing Complication No1, Complication No2, and Calibre No1, this is the start of what will be an ongoing series of limited releases.

Soleras are magical stuff. In some ways it's time travel and an incredible connection to a long gone past. The principle is that young w**e goes into a barrel and then after a period of time a third of it is racked into the next rung of the solera, which in turn feeds the next rung of the solera and so on and so forth stretching back centuries, if not quite time immemorial.

The purpose of the solera are multiple. As a system of perpetual blending it produces a product that is theoretically incredibly consistent, but also one that is forever evolving.

In some cases it's important to keep introducing new w**es in order to keep feeding the flor, the yeast that forms a blanket on top of the w**es of fino and manzanilla.

We'll be exploring soleras, sherry and much more in this masterclass on 4 November.
