🍖 Garlic & Paprika Marinade for Pork Ribs
This marinade gives pork ribs a deep, smoky, garlicky and slightly sweet flavour, while helping create a beautiful caramelised finish when cooked.
🥣 Ingredients
For approximately 1 kg of pork ribs:
4 cloves fresh garlic, finely minced
2 tablespoons paprika — smoked paprika for a deeper flavour
3 tablespoons tomato sauce or ketchup
2 tablespoons Worcestershire sauce
2 tablespoons honey or brown sugar
2 tablespoons cooking oil
1 tablespoon lemon juice or vinegar
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon onion powder
½ teaspoon chilli powder or cayenne pepper — optional
1 teaspoon dried mixed herbs — optional
👩🍳 Method
Prepare the marinade:
Add the garlic, paprika, tomato sauce, Worcestershire sauce, honey, oil and lemon juice to a bowl.
Add the salt, black pepper, onion powder and optional chilli and herbs.
Mix everything thoroughly until you have a smooth, rich marinade.
Prepare the ribs:
Pat the ribs dry with paper towel. If the membrane is still attached to the bone side, remove it for more tender and flavourful ribs.
Place the ribs in a large dish or resealable bag. Pour the marinade over them and massage it thoroughly into the meat.
Cover and refrigerate for at least 2 hours. For the best flavour, marinate overnight.
Before cooking, allow the ribs to sit at room temperature for about 20–30 minutes.
🔥 Cooking
Cook the ribs slowly until tender, then finish them over higher heat to develop a sticky, caramelised coating.
