Uka is the Japanese word for emergence, and it was chosen as the brand’s name for the symbolism it embodies on several levels. From humble beginnings as organic grain in Koda Farms fields in California's San Joaquin Valley, the rice is transformed through milling at 60% or below, and brewing to emerge as a saké which is elegant and refined. The saké label is a sumie style butterfly- the lower wings are stylized maps of California and Fukushima, signaling a new relationship established between the family of an American rice farm, and a centuries-old brewer’s family in Japan. But most important, Uka saké increase ties, and fosters relationships between the USA and Japan. Uka saké completes the circle of connection by brewing this rice slowly at low temperatures near the Koda family’s ancestral home in Ogawa, Fukushima, Japan. This brewery, Ninki Shuzō, brews to match modern tastes, with casual daiginjō, sparkling saké, and saké intended to be enjoyed in a wine glass. Ninki does not mature their saké in tanks, they prefer bottle aging. All of this is done in pursuit of peak quality. They have maintained their ideals of brewing only ginjō saké, and doing so only by hand.

The McBrayer family was known for making the perfect batch of whiskey. W.H. McBrayer continued the tradition, purchasing the picturesque land with winding banks around Anderson County Cedar Creek. In 1844, it became the home of W.H. McBrayer’s Distillery #44 under the label “W.H. McBrayer Hand Made Sour Mash Whiskey." In 1848, his 2nd cousin opened Distillery #125, known as the J.H. McBrayer Distillery, along Hammond’s Creek. A distilling dynasty was established.

After being elected as Anderson County’s first judge, W.H. became known simply as “The Judge.” This moniker would follow him for the rest of his life — a reflection of his role as a beloved community leader. He went on to be elected to the Kentucky State Senate, but a busy political career never stopped him from building his whiskey business. W.H. was a newly elected senator when he began to give serious attention to his distillery. In 1856, he expanded operations. At the advice of his wife, Mary, The Judge made the decision to rename his distillery Cedar Brook. Cedar Brook would eventually grow to be a world-renowned brand with every bottle proudly displaying the McBrayer family name as a sign of best quality.

McBrayer’s whiskey reputation rose to new heights in 1873, winning a gold medal at the Universal Exhibition in Vienna. Three years later, McBrayer’s Bourbon also took home a gold medal at the Philadelphia Centennial Exposition, America’s first World’s Fair. Igniting global recognition, the brand and W.H. McBrayer put Kentucky Bourbon on the international map. Gaining worldwide fame for its superior quality, his Cedar Brook Bourbon became known as “the whiskey that made the crowned heads of Europe turn from Scotch to Bourbon.”

To honor The Judge, and his world famous distilled products, The McBrayers have resurrected the family business of Kentucky Bourbon. In 2016, McBrayer Legacy Spirits was created, built, and developed to introduce today’s Bourbon lover to a tradition of excellence handcrafted by The Judge himself over 175 years ago. Using a few carefully preserved bottles, faded historical documents, and handwritten recipes inspired by his batch that won the World’s Fair whiskey competition combined with modern distilling techniques, a specially formulated yeast strain, limestone-filtered Kentucky River water, and heirloom grains grown within 15 miles of the original distillery, the McBrayers will share a superior spirits that tell the story of the man who introduced Kentucky Bourbon to the world.

McBrayer family’s tribute to one of Kentucky’s founding distillers is their Legacy Series with "W.H. McBrayer Small Batch Barrel Proof". Using heirloom grains grown only a few miles from his original distillery, this spirit was carefully crafted to honor the superior quality that earned “The Judge’’ his worldwide whiskey reputation. To replicate his highly-coveted recipe, they used McBrayer’s original mash bill, which was discovered on the back of a handwritten letter he wrote to E.H. Taylor in 1870.

Pasqua Wines is a historic Veronese winery, owned by the Famiglia Pasqua. Their winery was founded in 1925. Today it is recognized worldwide as a producer and ambassador of prestigious Veneto wines. Pasqua combines a century of experience and deep understanding of the potential of the Valpolicella terroir with innovation in winemaking style. Their wines mainly represented through various expressions of Amarone, and labels representative of the east coast of Lake Garda, up to the Soave area. Their wines are an ensemble of time, composed of yesterday, today, and tomorrow. Each bottle holds history, and knowledge passed down from generation to generation, combined with a glance towards the future. Their wines are intended to withstand time, expressing fullness, maturing, and evolving.

Pasqua Romeo e Juliet is a red wine all about love and passion. This rosso is a blend of Corvina, Croatina, and Merlot. The grapes are picked by hand, and then left to dry in wooden crates in a drying loft. There, by means of humidity control and air circulation, the grapes lose around 30% of water content, thus achieving a high sugar concentration. This method is called Appassimento in Italian. It is an ancient, and artisanal drying technique. This raisination will also create a more lush, round, and velvet mouthfeel. Given that the grapes have differing ageing times, vinification takes place separately in steel tanks; thus the final blend is created at the end of this process. The wine is then aged in oak tonneau barrels for a period of three months.

In the glass it is a gorgeous, dense, and deeply coloured wine. Full of concentrated black and red cherry flavours, with plenty of hints of leather, and of spice. The palate has a layered texture, with muscular tannins providing a long finish. It is a wine of passion, longstanding tradition, and its strong link with its city of origin, Verona, and her rich history, culture, and beauty. If wine “is the Poetry of the Earth to the Heavens”, as Mario Soldati said, it is also a story, and this wine tells the love story that made Verona famous all over the world, the very myth that attracts thousands of tourists every day to visit one of the most romantic places, and invites them to leave and exchange messages of love in the courtyard of “Juliet’s house”. An original photograph of Juliet’s courtyard by the extremely talented photographer Giò Martorana, has become the only look for these wine bottles, an unmistakable element of their identity.

More than a century before Champagne, in 1531 The Benedictine Monks of The Abbey of Saint-Hilaire in the Southern foothills of Limoux created France's very first sparkling wine. By 1794, Blanquette de Limoux was well-known and appreciated throughout all of France. It was around that time that it was discovered by a famous American, Thomas Jefferson. The third American President was an expert on French wines, and Blanquette de Limoux was one of his favorites. So much so that it was an integral part of the wine cellar at Monticello. In fact, President Jefferson was probably the first person to bring the wine to America.

Today, over four and a half centuries later, Saint-Hilaire Blanquette de Limoux is known worldwide. After just one uncorking, you'll discover why the French compare Saint-Hilaire with their finest Champagne. Available at a fraction of the cost, you too will never pay outrageous prices for sparkling wine again.

The grapes used in the preparation Saint-Hilaire Blanquette de Limoux 2021 are from the 4 different terroirs of the appellation. The grapes used are 95% Mauzac, and 5% Chenin Blanc. Grapes are exclusively hand-picked to preserve their quality. During the second fermentation the bottles are stored horizontally in dark cellars with regulated temperature at 15°C so that the "prise de mousse" occurs slowly, an entirely natural process. The wine is then aged on second fermentation lees for at least a minimum of 12 months. The result is a beautiful mousse with persistent bubbles. The colour is an attractive light yellow robe, with green reflections. The perfume firstly exhales floral notes such as hawthorn, which leave space for more fruity notes such as white-fleshed fruits, all wrapped in ye**ty aromas. The wine keeps its honey notes whilst preserving its attractive freshness which is characterized by a fine effervescence, and a good acidity. The mouthfeel is luscious with creamy texture. A pleasant and well balanced bubbly, perhaps the best value estate bottled sparkling wine you will ever taste.

Theater Square Wine & Spirits encourages everyone to vote, and drink responsibly!

Proof & Wood Ventures, Inc. invest in and develop spirits brands, and also age their own spirits. Their core business is sourcing and bottling fine American whiskies, but they also import other high-quality spirits from around the world that were not available in the US previously. Founder Dave Schmier is delighted to be able to create both cocktail-friendly bottlings for value-focused bartenders and high-end collectors’ editions for connoisseurs. The name comes from the two things controlled as a blender and finisher of fine spirits, and the two things that are incredibly important to any spirit’s flavor: the proof at which it is bottled, and the wood of the barrel in which it is aged. THE REPRESENTATIVE
This Barrel Proof Straight Bourbon Whiskey was aged a minimum of 4 years, or 2 Congressional Terms, this is a Small Batch of approximately 20 barrels. The Bourbon was distilled at MPG in Indiana. Strong notes of vanilla, cherry and peach are present. The flavor is full of citrus and to***co, finished with long sweet vanilla notes and spice. It was bottled at 116.3 Proof. This Barrel Proof Straight Rye Whiskey was aged a minimum of 6 years, or 1 Senate term, in new charred oak barrels, mingling 10-20 select barrels. It was bottled at barrel proof to showcase the bold Rye flavors. A nutty palate with notes of toffee, orange peel, herbs, light to***co, with chocolate brownies, and a hint of blackberry. The mash bill was 95% Rye, and 5% Malted Barley. It was bottled at 116.1 Proof.

Happy International Chocolate Day!!! The history of chocolate can be traced back to 450 B.C., originating from Mesoamerica, present-day Mexico. The word “chocolate” is derived from the Nahuatl word, “chocolatl,” meaning “hot water” and the Aztec word, “xocoatl,” meaning “bitter water.” According to legend, chocolate found its way to Spain in the 16th century through Hernan Cortes, a Spanish explorer who discovered cocoa during his journey to the Americas. From then on, chocolate soon spread to other parts of Europe. The time-consuming process required to produce chocolate made it an expensive treat, which was restricted to the upper class. In 1828 the chocolate press was invented by a Dutch chemist called van Houten, eliminating the problem. The machine was able to squeeze roasted cocoa beans in order to obtain the fine cocoa powder used to make chocolate. This not only made chocolate more accessible to the common man, but also mass production possible. In the 20th century, chocolate is still being enjoyed all over the world, in a wide variety of exciting flavors and formulas. Cocoa is now grown and exported from over fifty countries, at over 4.7 million tons a year. It only makes sense that chocolate is celebrated on 13th of September, as Milton Snavely Hershey was born on this day in 1857. He was a renowned American businessman, known as the chocolatier who founded The Hershey Company, manufacturer of the Hershey’s confectionary brand.
