Let us introduce you to Jacob’s Pardon Small Batch American Whiskey #2

Based on the color alone, this isn’t just eight year old Tennessee bourbon; the color says this is light whiskey. On the swirl is a thin film and big big big legs. On the nose is some fruitiness, vanilla extract, bread pudding, toasted marshmallows. On the palate the fruit notes tend toward apple and pear, with some nice vanilla and almond extract notes, along with a hint of butterscotch and honey. On the finish, I get peach cobbler with a lot of cinnamon but it is light and airy somehow – like an amuse bouche of really good peach cobbler that somehow lingers.

We just picked up these hard-to-find bottles of Nikka Yoichi Single Malt and Nikka Miyagikyo Single Malt and we have to say, it’s pretty exciting. 🥃

Yoichi 🥃: This Japanese whisky is light and fruity with an abundance of peat and light smokiness. It has an acidity reminescent of pear-forward Sauvignon blanc wine. Likely due to it being younger in age (this is a non-age-statement) whisky. The lightness in color belies its young age.

Miyagikyo 🥃: Miyagikyo Aromatic Yeast is a limited release that takes a different path — no peat, just a focus on how yeast can shape flavour in bold, unexpected ways. Part of Nikka’s Discovery series, it’s a Japanese single malt layered with notes of peach, apricot and gentle spice — a standout from one of the most quietly inventive distilleries in Japan.
