As our regulars know, we spent YEARS looking for a Prosecco we'd be proud to include in our collection of artisan wines, so we've been delighted to work with Mattia and the Tasi team since 2017. Their passion project - to turn an abandoned quarry into a healthy ecosystem using biodynamic techniques - was also YEARS of work and waiting. The results speak for themselves ... Good things certainly do come to those who wait!!! ;-)

MOON NATURE is a zero dosage bubbly, made just like Champagne (aka the 'traditional method' where the 2nd fermentation is initiated in individual bottles). So that means the wine spends time ageing on the lees, gently infused with notes of toast and biscuit from the yeast, before its disgorged and released as a more complex and layered expression of sparkling Garganega.

What does the wine taste like? It's a fresh, dry sparkling with bright acidity balanced by warmth of fruit. Expect aromas of orchard fruit (apples, pears) and white flowers, with hints of breadcrumbs. Soft but persistent perlage; long finish. A note on the 'dosage' or sweetness level: This is a Brut Nature (no / zero dosage) although the fruity character from the Garganega keeps the experience round and less tart than some other zero dosage styles.

And a quick note from the winery: "We dedicate our first Metodo Classico to the crescent moon that inspires it. Old vines on loam and limestone soil. Old school pergola training system. Harvest by hand at the beginning of September. Soft pressing followed fermentation in stainless steel vats. 12 months of prise de mousse in the bottle. Brut Nature. Pair with 'bigoli con le sarde' - traditional handmade thick spaghetti with fried sardines."
