We were fortunate enough to gain behind-the-scenes access to Takenami Shuzoten, participating in several stages of this year’s brewing season. We’ll be releasing a series of reels showcasing the various brewing processes, so keep an eye out for them as they go live.

Takenami Shuzoten is located about an hour’s drive from Aomori city centre (double that in snowy conditions). It’s a small brewery with just 4-5 workers on staff who handle everything, from hauling rice to applying labels by hand. While the brewery was recently renovated for more efficient workflows, they’ve deliberately preserved certain manual processes. This allows Toji Takenami-san to personally oversee every step, ensuring each batch meets his exacting standards.

A look at what we’ll be pairing with shochu at our Shochu Bao-Ga-Liao Masterclass

Local favourites, reimagined with a Japanese twist, in collaboration with Chef Jing.

✨Popiah / Fried Spring Rolls — stuffed with shrimp and finished with ume for a bright, flavour-packed bite
✨Chye Poh Egg / Egg with Preserved Radish — smoked Japanese daikon, served as a delicate dashi tamago
✨Bak Chor Mee / Minced Meat Noodles — oil-glazed noodles, deeply savoury and dangerously slurpable
✨Kong Bak Bao / Braised Pork Belly Bun — Chef Jing’s signature melt-in-your-mouth kakuni

The perfect accompaniments for our shochu pairings.
