Considered a "top 1%" oyster, and are known for their rich flavor and beautiful presentation.
Known for their unique growing process and distinctive flavor. They are cultivated in floating bags that are tumbled by the tides, resulting in oysters with firm, plump meat and a deep, clean cup. The name "Shigoku" means "ultimate" in Japanese.
They are typically small to medium in size, around 2.5 inches.
Shigoku oysters 的中文是至極生蠔或宮城縣至極生蠔。 "Shigoku" 是日文"至極" 的音譯,意思是"極致" 或"最好"。

Phil, owner and founder of East Cape Oyster Co. named this oyster after the place where they’re grown in, at the head of Souris River at he East end of the Island.
