A cute snap of a pair of Tigres.
This has become a little off-menu favourite here. Meaning ‘Tigers’ the tapa is essentially a mussel croqueta, served in a mussel shell.
Poached Portarlington black mussels are poached, chopped and folded through bechamel then in with sun-dried tomatoes, shallots and some of that mussel stock.
Crumbed, fried and served with saffron mayo and chives.
