For the malva pudding:
250ml (1 cup) milk
15ml (1 tbsp.) vinegar
180ml (¾ cup) sugar
2 eggs
15ml (1 tbsp.) smooth apricot jam
30g (2 tbsp.) butter, melted
250ml (1 cup) cake flour
5ml (1 tsp.) bicarbonate of soda
Pinch of salt
For the orange sauce:
125ml (½ cup) orange juice
125ml (½ cup) cream
125ml (½ cup) sugar
60g butter
Directions
1.Preheat the oven to 180ºC. Grease an oven-proof dish with non-stick spray or vegetable oil. In a bowl, cream the butter, sugar and eggs together until light and fluffy, then add the jam and vinegar into mixture and mix thoroughly.
2.Sift the flour into a bowl and add salt. Gently stir the flour into the rest of your mixture. Continue to stir while pouring in the milk.
3.Pour the mixture into the oven-proof dish then place onto a baking tray and bake for 55 minutes or until golden brown on top. While the pudding is baking, you can make your sauce. Bring the ingredients to a boil in a small saucepan, stirring frequently.
4.When your pudding comes out of the oven, pour the sauce all over. Serve hot with custard or ice cream. You’ll be surprised if there’s any left for the next day!
