A savoury showstopper perfect for entertaining or a flavour-packed snack — buttery puff pastry shells filled with creamy mushrooms and tangy feta. Elegant, easy, and absolutely delicious!

🧺 Ingredients (makes ~12 vol-au-vents):
For the shells:

1 sheet Global Cuisine puff pastry (thawed)
1 egg (for egg wash)

For the filling:
1 tbsp olive oil or butter
250g mushrooms, finely chopped
1 clove garlic, minced
½ small onion, finely chopped
100g feta cheese, crumbled
2 tbsp cream or cream cheese (optional, for richness)
Salt & pepper to taste
Fresh thyme or parsley (optional garnish)

👩‍🍳 Method:
Prep the vol-au-vent shells:
Preheat oven to 200°C
Roll out puff pastry slightly.
Cut 12 circles using a cookie cutter (about 5–6 cm).
Cut out the centers of half the circles (so you get 6 rings).
Place whole circles on a baking tray. Brush edges with egg wash.
Place a ring on top of each whole circle. Brush tops with egg wash.
Prick the center base with a fork and bake for 12–15 minutes or until puffed and golden.
Press down the center gently to create a well after baking.

Make the filling:
In a pan, heat oil/butter. Add onions and sauté until soft.
Add garlic and mushrooms. Cook until mushrooms release water and it evaporates.
Season with salt, pepper, and optional herbs.
Stir in cream/cream cheese for a creamy texture. Remove from heat.
Mix in crumbled feta.

Assemble:
Spoon the warm mushroom-feta filling into each vol-au-vent shell.
Garnish with herbs and a sprinkle of extra feta if desired.
Serve warm as starters or high tea snacks.

🧁 5 Tart Recipes Using Puff Pastry:

1. Tomato & Basil Tart
Spread cream cheese or herbed ricotta on a sheet of puff pastry.
Layer with sliced tomatoes, sprinkle with salt, pepper, and fresh basil.
Bake at 200°C for 20–25 mins. Drizzle with olive oil to serve.

2. Caramelised Onion & Goat Cheese Tart
Sauté onions until golden and sweet.
Spread over pastry and top with crumbled goat cheese.
Bake until golden and finish with thyme or arugula.

3. Mushroom & Spinach Tart
Sauté mushrooms and spinach with garlic.
Spread a béchamel or cream base on pastry and top with the veggie mix.
Bake until golden brown and crisp.

4. Apple Cinnamon Tart
Thinly slice apples, toss with cinnamon and a little sugar.
Arrange neatly over pastry and fold in edges slightly.
Brush with butter and bake until crisp and caramelised.

Samoosa, but make it street food magic! 💥
Samoosa Chaat is a bold explosion of flavour — crunchy, tangy, spicy, and sweet, all in one bite. It’s everything you didn’t know your snack plate needed 🤤
Perfect for parties or indulgent cravings — this one’s a showstopper!

🧑‍🍳 SAMOOSA CHAAT RECIPE (serves 2–4)

Ingredients:
4 potato or lentil samoosas (fried or baked)
½ cup plain yoghurt (or coconut yoghurt for vegan)
2 tbsp tamarind chutney
2 tbsp green chutney (mint-coriander)
1 small red onion, finely chopped

1 small tomato, finely chopped
2 tbsp pomegranate seeds (optional)
½ cup sev or crushed papdi (for crunch)
Fresh coriander, chopped
Chaat masala, to taste
Salt, to taste
Lemon juice, to taste

Instructions:
Heat the samoosas and lightly crush them into chunks.
Place them on a serving plate as the base.
Spoon over the yoghurt, followed by both chutneys.
Sprinkle chopped onion, tomato, and pomegranate seeds.
Add sev or crushed papdi for crunch.
Finish with fresh coriander, a squeeze of lemon, and a sprinkle of chaat masala.

Serve immediately and enjoy the explosion of textures and flavours!
