🌿 Where Kerala Flavour Begins 🥥🔥

Traditionally, Kerala dishes use shallots (small red onions), but since they’re hard to find in Cape Town, we use the next best thing:
🔴 Red onions – slightly sharp and sweet, perfect for slow roasting to bring out that rich curry base.
🟡 Yellow onions – mellow and golden, ideal for sambars, dhals/parripu and stews.
The trick? Caramelise them just right in coconut oil and you’ve got the start of something magical.
🫚 Ginger:
Fresh, spicy and earthy — it adds warmth and a signature kick to both veg and non-veg dishes. Always crushed or grated, never skipped.
🧄 Garlic:
Used generously, garlic deepens the flavour base and gives that unmistakable Kerala aroma when fried with mustard seeds and curry leaves.
🌶️ Green Chilies:
Not just for heat — they add a fresh, sharp brightness that balances the creaminess of coconut milk.
🥥 Coconut Milk, Cream & Flesh:
This is Kerala’s love language.
