A Cask with Two Whisky Influences, back by populer demand.
Canadian malt bourbon finished casks offer a unique flavour profile compared with a traditional used bourbon barrel.
Originally first-fill American bourbon casks, the oak was first allowed to absorb the rich, sweet characteristics of bourbon developing layers of vanilla, caramel, toffee and toasted oak.
The casks were subsequently used to mature Canadian malt whisky, adding a second layer of malt, dried fruit, gentle spice and whisky character to the oak.
When these casks are used for barrel aged beer, the result can be a complex combination of bourbon sweetness, mature oak and Canadian malt whisky character.
The combination of the two previous fills gives the cask a depth and complexity that is difficult to achieve with a standard bourbon barrel alone. The original bourbon influence provides the sweet, rich foundation, while the subsequent Canadian malt whisky maturation adds another layer of flavour and character.
