Looking for a summer evening cool down? Tonight’s experiment was to pair with lemon-lavender shortbread cookies.

Results:
While the lemon enhances the bergamot, and the lavender brings out the earl gray tea leaves, it makes a nice touch to enjoy a simple shot of Liath on the rocks with the aromatic cookies added to the cardamom and coriander finish. The savory citrus flavor lingers to help in a nice thirst quenching cooldown on a warm summer evening 🙂 Enjoy!

Just threw this together at a friend's house... super simple, easy, light, summery cocktail... can you help me name it? 2oz C&C Honey Rum, 4 oz Raspberry fizzy water (Cascade Ice), 1/4 oz honey syrup and fresh berries. So light and awesome!

The final night of our countdown to National Rum Day! Come to the tasting room tomorrow for free tastings and a special cocktail tasting! We are open 4-7, stop by on your way home and pick up supplies to make any of this past week's cocktails.

Tonight we have our version of the traditional Trader Vic's Mai Tai, made with all 3 of our rums (maybe we should call it a Mai Tri?) and a PNW Orgeat syrup. This isn't the sweet, pineapple Mai Tai you drank in high school... its nicely balanced with citrus, almond and a good kick of rum.

1 oz Rum47 Amber
1/2 oz Rum 47 White
1/2 oz Comb & Cane
1/2 oz Cointreau
3/4 oz Orgeat (Raft syrups are all natural and cloudy... hence the milky looking cocktail)
Juice from 1 lime (about an oz or a little more)

Shake ingredients with ice until the shaker is too cold to hold. Strain into a glass with ice and garnish with mint (and a lime slice if you want)

Hey! We missed day 3 of our countdown to National Rum Day... because, you know... Monday happened. So here it is, a day late! This is one we made up ourselves... and it is one of my favorites. Our day 3 cocktail is the poorly named "Water Course." In this one, we mix a little 94 proof with some 80 proof, and cut it with some more 80 proof... so, it's kinda like water? This one is oakey and spicy with a touch of orange sweetness. Delicious but quite potent.

2 oz Rum47 Amber
3/4 oz Tine, spiced tea liqueur
3/4 oz Cointreau

Stir with ice, and strain into a martini glass. Yum!
