Also in the lab this week...we're working new iterations of our quest for complex mint distillates. Starting with Minthe (the last bottles of which will be for sale at the distillery now through next summer), which many in the cocktail world are familiar with and continuing with research into old Luftwassers ("spirit of the air"), we're now seeking a complex that rises far above the peppermint simplicity of how we currently approach this flavor. We have TESTAMINT peppermint schnapps in the bottle and in stores, for those seeking a peppermint BOMB (albeit with bitter almond, clove, and lemon added). But look for Minthe v2 by next summer...hopefully more approachable out of the bottle than the unsweetened Minthe. Stay tuned.

In the lab today, we're distilling up a sample of a classic Breslauer spirit (very very Long Lost) using Nutmeg and Mace (myristica fragrans) with Citrus, Cinnamon, Peppery Cubeb, Cardamom, with floral and herbal components. It's a potent firecracker of a distillate, and we'll decide soon if we want to scale it up into a very limited release. We consider it a challenge spirit, only for the most adventurous palates. But for a blast from a forgotten past, and a taste of of a Long Lost tradition bolder than the Danziger (think Oread there), it's unbeatable. If it gets the green light, look for a very limited release late winter / early next year.

We're closing at 1p today for a special event. Back tomorrow and Sat for normal hours. Bottling Hartnet Batch 2 this week...you've sold us out of Batch 1! Also down to last bottles of plum brandy & just sold out of Maenad. We'll post about each individually.

Distilling an essence in the lab with fresh rosemary from the garden. The aromatics are at their peak in this plant right now. We can still smell the rosemary on our hands hours later...a reminder that rosemary used to be associated with memory.

Next week we're starting out next batch of Ko-Co-Wah, our cocoa flavored rum, made with real cocoa beans, dark roasted coffee, green cardamom, whole stick cinnamon, Ugandan vanilla, paired with unaged and aged Caribbean rum. The flavor profile of this batches cocoa beans have our mouths watering..." The aroma is an intense thick, deep chocolate fudge and chocolate covered dried cherries...The chocolate flavor is simply huge. The full, resonant chocolate core...quickly gives way to super sweet burnt yet soft caramel and supple leather notes....Finally there is a clean earthiness that brings a glorious deep mouth feel to the whole chocolate. The impression I'm left with is a thick cherry jam laced chocolate." Real cocoa beans...real depth of flavor. Have you tasted this treat yet?

Our recent large lemon balm distillation expands our interest in this fascinating herb. Melissa officinalis - (melissa from the Greek for "bee," officinalis meaning "workshop/apocathery"). The plant is a cornerstone of Chartreuse...usually listed as the primary ingredient. We began our journey with Eau de Melisse (des Carmes sometimes added for the monks & nuns who originally made it). We call it Meliae, after the mythological spirits associated with honey and bees. Eau de Melisse was our first focused FRESH herbal distillation, per the original. Our third and last iteration of Eau de Melisse, a barrel aged version, will be available this fall. Our next use of lemon balm will be completely different and should be quite interesting. Stay tuned for developments...

100 Lbs. fresh lemon balm just arrived. New project starts today! And it's not another Eau de Melisse (but look for a barrel aged version of that product by XMAS at the distillery).
