Weller Full Proof - William Larue Weller developed his original bourbon recipe with wheat, rather than rye. Bottled at the same 114 proof the spirit was when it entered into the barrel, this non-chill filtered wheated bourbon forgoes chill filtration to preserve all the naturally occurring residual oils and flavors that occur during the distillation and aging process (potentially making it appear cloudy at cold temperatures). This bourbon balances a rich mouth feel, with robust notes of vanilla and oak. Walking With Giants - This is a dream come true collaboration. Sierra Nevada Brewery reached out to do a double collab, one at our place and one at their place. We decided to do what we do best at each other's collab, a stout in Chico and a whole leaf IPA in Rocklin. Walking with Giants is a West Coast IPA brewed with a 5.5 lb per bbl combo of 100% whole leaf Cascade, Strata, and Citra hops. This unusual and more challenging approach gives you an aromatic experience similar to walking through a hop yard during the yearly harvest. The flavor is quite different too, which lends more hop "stickiness" that lingers longer than traditional pelletized varieties. 7.0%

Uncle Chan’s Enchanted Elixir -This beer holds a very special meaning for us and our main owner, Nu. Uncle Chan is responsible for sponsoring Nu and his family as they immigrated from Thailand to California in the early 1990's. Uncle Chan's generosity has indirectly led to the creation of our brewery and all the beer that comes out of it. So when you sip on this beer give a little thanks to the person that made it all happen.

Uncle Chan's favorite beers of ours has been our Hazies with Galaxy hops. So we decided to load up this beer with a 5.5 lb per bbl combo of Galaxy, Citra, and NZ Cascade. 7%

Full Blown Galaxy -Galaxy is a hop that is hard to come by due to its intense fruit characters and limited import quantities from Australia. Full Blown Galaxy is a 100% Galaxy hopped Hazy IPA at a rate of 5.5 lbs per bbl with intense flavors of guava, navel oranges, grapefruit, and honeydew. 7.0%

Weller’s 12 year - A classic bourbon nose through and through consisting of rich vanilla, sweet caramel, and robust oak. A touch of red fruit sweetness accents the oak nicely by adding a slight degree of jest. The nose is nicely constructed, and even though it doesn’t present an abundance of depth, what it does offer is spot on. Saying this falls in the quintessential bourbon nose category would be an understatement, this is the very definition of it.
