I always thought the best beer is made in small batches.

This is the first time I’ll be truly commercially brewing beer. Was never formally trained just read a lot about brewing and used my knowledge from medical school to implement it to brewing scientific practices.

Growing up I didn’t care much for school. Heard it a million times in my life… smart but unmotivated.
I was always a math and science guy… til this day can barely speak English ;)

There are always teachers / bosses in your life that leave lasting impressions on you.

Thank you Dr Wertis for teaching me math. It’s helped enormously in the things I do today. She wrote me a letter of recommendation for college. It helped me gain acceptance to Villanova university. I will never forget the person from admissions called me and said “ we are not sure if the letter of recommendation was a good or a bad thing but it was intriguing to them so they accepted me.”

To my old bosses Stan and Mike in Fort Lauderdale RK construction. My first “ real “ job ever was unloading trucks for a construction company. I later learned to install trim molding / frame / sheet rock / spackle. Helped build some of the largest sky scrapers in Southern Florida. It’s wild how I still am using a lot of those skills today

To Dr Mingiyoni my pathology professor in medical school in Brooklyn. Never thought I would use a microscope / bunson burner / centrifuge / stir plate after your lessons but here I am checking on yeast viability and propagation.

My past mentors taught me that intelligence isn’t based off of SAT scores or GPA. It’s determined from being placed in a particular situation with limited resources and diminishing time.

I am blessed to have the knowledge last down upon me from my previous mentors . I know there will be a learning curve on brewing commercial size batches. I’m beyond ecstatic to test my knowledge

The building has been standing since 1940. It’s the biggest project I have taken on in my life.

I knew we were going to be riding the struggle bus with this one . We needed to rip out 3 layers of flooring . All new plumbing. All new electric .

This isn’t my house so I can’t just sell it to someone else after this but Somerset has given me great vision. After all my years living in Manhattan / queens / Brooklyn I wanted to bring a space where kids can play and dogs can roam free. I wanted to create a space where people can just sit down and shoot the breeze. I think we have done a wonderful job at our old location of creating that vibe.

I believe in the what I started . It propels me every day to knock out a few things and keep moving forward. Yesterday it was installing stainless steel panels in the kitchen. Today it was spackling. Tomorrow it’s hanging off the roof and finishing the hardy board backing.

The beauty of doing construction is that you have total control of the way you everything comes out. The more effort you put in… the better it will come out

Everyone asking when we are opening. If this was solely a brewery I would say 4 weeks but it’s a restaurant so I’m guessing 6 weeks best case scenario and 10 weeks would probably be correct 👍

Thank you to everyone who continues to motivate me and the team to get this restaurant up and running .
