Kentucky Bourbon Barrel Ale Beer Cheese Soup
A creamy and comforting beer cheese soup with a robust flavor from the bourbon barrel-aged ale.
Ingredients:
1 bottle (12 oz) Kentucky Bourbon Barrel Ale
4 tablespoons butter
1/2 cup diced onion
1/2 cup diced carrots
1/2 cup diced celery
1/4 cup all-purpose flour
2 cups milk
2 cups chicken or vegetable broth
1/2 teaspoon dry mustard
8 oz sharp cheddar cheese, shredded
Salt and white pepper to taste
Croutons and chopped chives for garnish
Directions:
In a large pot or Dutch oven, melt the butter over medium heat.
Add the onion, carrots, and celery and cook until softened.
Stir in the flour and cook for 1 minute.
Gradually whisk in the Kentucky Bourbon Barrel Ale until smooth.
Slowly whisk in the milk and broth. Bring to a simmer and cook until slightly thickened.
Reduce heat to low and stir in the dry mustard.
Gradually add the shredded cheddar cheese, stirring until melted and smooth. Do not let the soup boil after adding the cheese.
Season with salt and white pepper.
Serve hot, garnished with croutons and chives.
