🍀🧁St. Patrick’s Day Cupcakes 🧁🍀
For the Cupcakes:
1 ½ cups (190g) all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
½ cup (115g) unsalted butter, softened
¾ cup (150g) granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup (120ml) whole milk or buttermilk
Green food coloring (a few drops)
2 tbsp Irish Cream Liqueur ( Baileys, Merrys, Ryans ) for an extra festive touch
For the Buttercream Frosting:
1 cup (230g) unsalted butter, softened
3 cups (360g) powdered sugar
2 tbsp heavy cream or milk
1 tsp vanilla extract
Green food coloring
Optional: 1 tbsp Irish Cream Liqueur for a boozy version
For Decoration:
Green and gold sprinkles
Shamrock-shaped fondant or candy decorations
Directions
1️⃣ Prepare the Cupcakes:
Preheat oven to 350°F (175°C). Line a muffin tin with green cupcake liners.
In a bowl, whisk together flour, baking powder, and salt.
In a separate bowl, beat the butter and sugar until light and fluffy (about 2 minutes).
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract (and Irish cream, if using).
Gradually add the dry ingredients, alternating with milk, mixing until just combined. Add green food coloring and mix until you reach the desired shade.
Divide batter evenly among cupcake liners, filling each about ¾ full.
Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
2️⃣ Make the Buttercream Frosting:
Beat butter until smooth and creamy.
Gradually add powdered sugar, one cup at a time, mixing well.
Add vanilla extract, heavy cream (and Irish cream, if using). Mix until fluffy.
Add green food coloring and beat until fully incorporated.
3️⃣ Decorate the Cupcakes:
Transfer frosting to a piping bag fitted with a star tip. Pipe swirls on cooled cupcakes.
Sprinkle with green and gold sprinkles and top with a shamrock decoration.
4️⃣ Serve & Enjoy!
Let cupcakes set for 10 minutes before serving. Enjoy your festive treats!
