Happy Tuesday from the birdhouse ! Hope everyone had a relaxing Memorial Day weekend.

We’re stocked with fresh mousse cakes including: mango, banana, coffee bean & pistachio,,, following with honey cake , and sourdough options.

From the deli and grab & go, we have chicken salads, high protein spinach dip, teriyaki chicken energy bowls, chicken tikka masala, organic chicken & garden vegetable quinoa soup & more!

Fresh sandwiches made daily!

We’re open 10a-5pm Mon-Fri, located at 98 S. John Sims Parkway in Valparaiso.

For more than 40 years, Kim Gunderson, founder of Bright‑Eyed Kitchens, has been a beloved culinary presence in the Southeast. With deep experience in cooking, scratch baking, private and corporate catering, and personal chef services, she has built a reputation for food that is both handcrafted and heartfelt.

Alongside her catering and event work, Kim operates a kitchen commissary where she supports local chefs and food entrepreneurs in developing their offerings. Through hands‑on consulting, she helps them navigate menu creation, operations, and the early stages of building a sustainable culinary business.

Her newest venture, Chickadees Artisanal Market, brings her signature recipes to the community through small‑batch chicken salads, premade meals, and macro-friendly‑meals, along with other local chefs and artisans. With a thoughtful approach to dietary needs, she offers options that are gluten‑free, keto‑friendly, and crafted with care.

We’re honored to have Kim helping shape this movement through her generosity of knowledge, love of craft, and belief in building a stronger, more connected food community.
