When it comes to Farmhouse Ales brewed in the U.S., you'll find a handful of elite breweries ranked among the very best. Beer geeks love to argue the merits of Jester King, de Garde, Side Project, The Rare Barrel, Casey, and Hill Farmstead - all of them make incredible beer.
But hang out with Wild Ale fiends and Sour sippers long enough, and you'll hear one name come up again and again: Cellador Ales.
What makes this brewery so beloved? It starts with a commitment to Old World techniques. The brewers ferment and condition all their beers in oak barrels with a variety of wild and cultivated yeasts - including multiple strains of Brettanomyces - capturing funky, tangy flavors that reflect the brewing traditions of northern Europe.
But in a decidedly new-school twist, they use a wide variety of local ingredients so their beers represent a true taste of the southwestern region they call home. Their stellar use of fruit - from peaches, to blackberries, to currants - imbues their beers with depth and complexity. Plus, they lean into rarely seen foraged plants like prickly pear, yucca, willow, and black sage to create flavors you won't find anywhere else.
