We’re proud to introduce two more of November’s Harvest Club producers!

The Wavy Wine story begins way back in 2019. Eliot Kessel and Jude Zasadzki struck up a conversation while celebrating Eliot’s daughter's birthday. The two had been drinking natural wines from all over the world for some time and they were trying to fathom how they could start a project that captured the spirits of the ‘Vin de Soif’ they had grown to love. They knew that no matter what they did, easy drinking summer wines were a must.
So after some searching, they came across a vineyard in Chico that had a little bit of Pinot Gris available. They knew from the get that they were gonna make this in the northern Italian Ramato style where the Pinot Gris sits on its skins for a few days producing a copperish pink wine that truly highlights the deliciousness of the variety. They blended a little bit of Chardonnay that they scored from Scribe and their first wine LS Gris was born.
It was an immediate hit and was devoured almost exclusively by Las Angelinos at some of the trendiest wine bars in SoCal. Fast forward to today and they now make a total of two wines. LS Gris of course and their newest addition Super Californian a chillable red that is so crisp and refreshing, thank Bacchus it comes in a liter. (Flatiron, S.F.)

In this sense, every glass, every bottle is a fulfilling pleasure, not at all condescending or aloof, but extremely accessible and simply authentic. In the southern Palatinate hinterland in Mühlhofen, Sauvignon, Pinot Blanc, Riesling, Chardonnay and some red wines are vinified biodynamically (Demeter-certified since the beginning of 2018) from healthy, living soil. Orange wine -also called amber wine- is essentially a wine made from white grapes, but made in the style of red wine. In white winemaking, you usually press the white grapes and separate the juice from the skins, while with orange wine, the juice is left to macerate with both the skins and the stems. This not only turns the juice a shade of orange, but also gives the wine body, tannins, and an added complexity. Orange wines are dry and bold, therefore pair well with equally bold foods.

Meet two of this month Harvest Club Producers:
Ross and Bee Maloof, Maloof Wines, Forest Grove, Oregon
Maloof Wines is a husband-and-wife winery team based in Forest Grove, OR. They are a true yin and yang team. One materials engineer grounded in hard science, and one restaurant professional with a sensory aligned M.O. Bee Maloof represents the hard science behind the project. Ross Maloof broke into the production side of the wine industry working harvest at Day Camp, a co-op started by Brianne Day. Prior to getting his first taste for winemaking, he worked for just over a decade in the Philadelphia dining scene with his work having a huge focus on beverage.
Today, Maloof Wines are produced at their estate vineyard and winery location, No Clos Radio, just outside of Forest Grove, OR. The vineyard and winery is shared with their closest friends, Jim and Jenny from Fossil & Fawn. The Maloofs are dedicated to making wines full of energy, with the number one goal of truly capturing a place and time in each bottle. They work closely with their farmers to achieve this goal, and consider them to be the true inspiration of their work.

Andreas Gsellmann's burning passion for wine immediately catches the eye and the Gsellmann family's wine history goes back more than 200 years. Winemaking has been practiced in Burgenland on Lake Neusiedler, a short 2-hour drive southeast of Vienna, for more than 2,000 years. Until 1921, the state of Burgenland was part of Hungary and since then has been one of the most important and progressive wine regions in Austria.
Andreas Gsellmann is considered one of Burgenland's visionary and younger winemakers and he continues the pioneering work that his father Hans Gsellmann started with 100% biodynamic viticulture in 2010.
The family grows its own approximately 23 hectares of Chardonnay, Weissburgunder, Traminer, Scheurebe, Neuburger, Welschriesling, Riesling, Sauvignon Blanc, Grauburgunder, St. Laurent, Zweigelt, Blaufränkisch, Blauburgunder and Merlot.

Time to cozy up with some mulled wine.
Mulled wine is usually served at Christmas markets in Europe and Canada. But it is easy to make at home to sweeten any cold night or warm a winter party.
The best red wine to use for mulled wine is fruity and full bodied Merlot, Zinfandel or Garnacha (also called Grenache) as they best support all of the flavors we’ll be adding.
Pour a bottle of wine in a saucepan and add all the ingredients: Zest one lemon and half an orange, add 1 star anise, 2 cinnamon sticks, 2 cloves, one sliced orange, maple syrup to taste and a dash of brandy.
Bring the wine to a simmer, without boiling, for about 5 minutes. Lower the heat and continue cooking for a few more minutes to allow the spices to release all their flavors. Strain and serve hot, with a slice of citrus.

99 points Robert Parker's Wine Advocate: "Winemaker Michael Silacci commented that usually the blends are finished in January or February after the vintage. This year, with the 2019s, he was still tweaking the blend, but he did mention that this is "pretty close to the final blend." Deep garnet-purple in color, the 2019 Opus One leaps from the glass with notes of Black Forest cake, Morello cherries, mulberries and fresh blackcurrants plus hints of licorice, wilted roses, Sichuan pepper and iron ore. Full-bodied, the palate is jam-packed with juicy black, blue and red fruits, framed by velvety tannins and background freshness, finishing on a compelling earthy/mineral note. Tasted as a barrel sample, this is a truly magnificent Opus One in the making!"
From the Winemaker: "The Opus One 2019 has intense aromas of black plum, blueberry, black currant, and dried rose petals, accentuated by mineral undertones. The creamy, satiny texture is framed by fine-grained tannins. The freshness and soft glow of acidity create a subtle tension with dark fruit flavors, savory herbs, espresso, and cocoa. A delicate dark chocolate bitterness lingers on the finish."

To decant or not to decant?
Most sommeliers will tell you “It depends.” It depends on the kind of wine and how old is that bottle!
Decanting is the process of pouring wine (young or old) from a bottle, into another vessel -or decanter- to oxygenate it and allowing it to “open” faster to its optimal taste.
In the case of older bottles it can be tricky to remove sediment by decanting without disturbing the sediment that lies at the bottom. Also, an old wine is fragile and will prefer not to be rushed. Some sommeliers advise just pouring slowly right from the bottle, one glass at a time.

"Situated on gravel banks to the south of Saint-Julien, this estate has produced some terrific wines over the years, and the 2019 Lanessan is a solid effort. Exhibiting aromas of cassis, loamy coil, cigar box and licorice, it's medium to full-bodied, lively and nicely balanced, with a fleshy core of fruit and ripe, youthfully chewy tannins."

The Chateau Lanessan vineyard has belonged to the Bouteiller family since the 18th century. Eight generations of this same family have succeeded each other at the helm of the estate. A woman, Paz Espejo, born and trained in Madrid, took over the management of Chateau Lanessan in 2009. This change in management corresponds to the Bouteiller family's stated desire to breathe new life into this beautiful property. "The challenge is to remain loyal to our region while adapting to consumer expectations." The Cru Bourgeois Château Lanessan stands out today as one of the most beautiful properties in Haut-Médoc.

Iliana Malihin | 2021 "Young Vines" Vidiano | Rethymno, Crete, Greece
A Greek Wine Club special feature by one of Greece’s youngest and most progressive winemakers from Crete. Just shy of 30, Iliana Malihin has caught the attention of international trade by producing one of the most natural expressions of the Cretan variety, Vidiano. Her winery hails from the mountain villages of Rethymno and she is elevating the reputation of the area by the potential the land has. Her Vidiano vines are farmed organically and are low-intervention production.
The result is two wines from the Vidiano variety in very small productions. Vidiano old vines come from a rare vineyard of 90-140 + years kept by the winegrowers of the area, while Vidiano young vines are a mixture of three different vineyards that are not older than 15 years.
Discover high-toned notes of white peach, pear, apricot skin, chamomile, citrus leaf, lemon, melon peel, and herbs, while finishing clean.

Portions of what is today the Hendry Ranch were some of the first vineyards planted in Napa. Pioneering winemakers Frederick and John Sigrist began planting in 1859 and soon had one of the most extensive vineyards in Napa. The Hendry family has been continuously farming the ranch for more than 75 years.
"Dense, glass-coating purple color with violet at the rim. Leather, fragrant fruit, tea and spice in the initial aromatic profile. With air, some of the more earthy elements recede, and brown sugar adds a sweet note to the complex mix. Lovely, soft entry, broad and even palate impression, with bittersweet and dried blueberry fruit. Moderately dense and structured. Gentle, fine-grained tannins. Bittersweet, baking-chocolate finish.
The tannins will make a terrific foil for richer cuts of beef and game, a garlicky rack of lamb, pot roasts and stews, or a big juicy burger with sautéed mushrooms.

Although you should ask your doctor before you believe us, as far as we know moderate consumption of red and rosé wines has been shown to protect the brain from neurological damage. It has also a positive effect on health, like cholesterol, digestive system, mood, and even the common cold! Basically, drinking a glass of wine is part of an overall healthier lifestyle. Way to go, baby boomers!
