Red, White & Blueberry Icebox Cake = your new no-bake 4th of July showstopper! 🍓🫐🍰
Ingredients:
2 cups heavy whipping cream
1 tsp vanilla extract
3 tbsp powdered sugar
1 (8 oz) tub whipped topping (optional, for extra fluff)
1 box graham crackers
1½ cups sliced strawberries
1½ cups blueberries
Optional: fresh mint, white chocolate shavings for topping
Instructions:
1. Beat heavy cream, vanilla, and powdered sugar until stiff peaks form. Fold in whipped topping if using.
2. In a 9x13 dish, spread a thin layer of whipped cream. Add a layer of graham crackers. Top with whipped cream, then scatter strawberries and blueberries.
3. Continue layering: grahams → cream → berries, ending with a top layer of whipped cream and berries arranged in a flag or firework pattern.
4. Cover and refrigerate for at least 4 hours (overnight is best) to let the graham crackers soften into a cake-like texture.
5. Garnish with mint leaves and white chocolate shavings before serving for extra flair.
