Beau's Choice: Fukuumi Yamadanishiki Hiire Junmai "Lucky Sea"

The nose on this sake from Nagasaki (not a lot of breweries down there) is a fun collection of grapefruit, green apple, honeydew, tangerine, peach jelly, strawberries and cream, powdered sugar, kiwi, vanilla, and white floral aromas. The label reads, “The tides have brought all good fortune.” And we like to add, “And good sake.” Light, clean, spritzy, bright, lively, fresh, refreshing, slightly dry and with a wine-lover’s astringency, this brew drinks like the tides coming in and going out. Look for lychee, lemon water, watermelon, white cherry, green apple, green grape, mochi, and steamed rice flavors that excel in a white wine glass. This is modern sake at its best that is flavorful and bright with a very fragrant aroma and lively dry character. Some say it drinks like it looks!

If you haven't tried Kenbishi, then your sake journey is not yet complete! It is the oldest brand still being produced (since 1505) and holds true to their motto, "If you're chasing the trend, you're already late." .official

In Beau's words, here's what Kenbishi Kuromatsu Honjozo is all about:

"The nose on this extremely famous Honjozo from the brewery that calls itself “The Oldest Brand Since 1505” is a dynamic collection of steamed rice, cocoa, maple syrup, and nougat aromas. Their distinctive labels show a sword tip coming right at you, just like the deep, rich, and full-bodied flavors coming right at your palate. This brew is dense, thick, and feels great. Look for savory and sweet rice flavors that flow on a fat liquid that is excellent for warming. Dig deep and you'll find a layer of cocoa tones. Dig even deeper and you will happen upon a cream brûlée flavor that is out of this world. Truly one of the classic Honjozos that every sake explorer should try at some point."

Feel the powerful energy of Chiyomusubi Goriki 40 Junmai Daiginjo. ⚡️ 千代むすび酒造🔷ちよむすび🔷chiyomusubi

"The nose on this brew that is made using the Goriki brewing rice varietal has a nice collection of berry, melon, grape, strawberry, and gardenia aromas. Take a bite out of this bright, expansive, tingly, and crisp sake and be rewarded with a fruit basket full of flavors. Hints of apple, sweet melon, and berries come first. Then look for the sugar tones like rock candy, sugar cubes, and powdered sugar on strawberries. The excellent acid vividness offsets the sweet flavors to create a very energetic and bright sake-drinking experience. Full-bodied and chewy, it is a viscous sake that is considered an “ultra” Daiginjo because it’s been milled to 40%. Another one of those sakes that makes you think, "How can rice and water taste like fruit and sugar goodness!?" A solid brew that is a good gift-giving sake that is appealing to most!"

Thank you to our colleague A Masaoka Baxter for presenting this wonderfully tasty Kinkame flight by Okamura Honke, a historic brewery founded in 1854 and located in Toyosato Town, Shiga Prefecture.

These were very drinkable, food friendly and a reminder of what real sake tastes like! ✨
