Tasty Tuesday Pairing: Zaku Junmai + Karasumi!
We love Zaku! Great brewery that makes exceptional sake across the board. The Junmai is no exception. In our review for the Ho No Tomo under the food pairing recommendations, we simply wrote: "Anything from the ocean."
Sure, you might think sashimi or fried squid legs, but what's more "from the ocean" than dried mullet fish eggs? Karasumi is a delicacy made from salted and dried grey mullet roe, the Japanese version of Italian Bottarga.
Talk about a pairing! This profound flavor, which is so concentrated and "fishy" but elegant and complex just welcomes the sake so much! The starch melts with the ocean protein in a way that butter melts with toast! The karasumi was very light in salt content, and that made the unique citrus, ocean water, and umami of the Zaku dance sublimely in the palate.
