Both of these are the crown jewels of my career. In each experience, I got to work with my personal industry GOATs, something not many of us ever get to do.

Where do I even start with this?
This pick was an emotional experience, in the best way. I have the deepest respect for agave spirits and the maestras and maestros who care for the plant from the soil up, through decades of nurturing, and into the art of distillation.
The maguey used here was 22 to 25 years old. I have employees younger than this. It was cooked for five days in a conical oven fired by black oak, fermented for 22 days in cypress, then double distilled in copper. Incredible.
This extremely rare batch yielded only 13 cases. Our little shop is the only place in the world you can find it, which is wild to say.
nose: bright tepextate. ripe agave, minerality, earth, mint
palate: silky. bright fruit, pepper, vegetal. beautifully balanced at 46.9%
finish: cooked agave, mint, citrus, subtle smoke, marzipan sweetness. no ethanol burn
This one honestly got me emotional. I know I will look back on this as a highlight of my career and say “this really happened”
