Our wine manager and resident Mezcal expert, Ed Draves, is in Oaxaca touring agave fields! Here's a video he took on Saturday in the fields of , where he was given a clinic on soil, sunlight altitude and water. "If these were French Vineyards, some of Convite's fields would be considered Grand Cru. Agave has been grown in these hills for over a thousand years."
