It is sweet and salty, tastes like toast dunked in brown butter, and has a velvety texture with a slight crystally crunch. Gruyère is my favorite cheese, and I decided to offer it in an additional new way, chunked. It is a very technical term in the cheesemonger world (haha), which means I gently break off small pieces from 75 pound wheel and offer them by the lb in tubs. They are easy to snack on!

Since most of you only see my images on Facebook, I wanted to give you all a sense of the clarity and resolution that visitors to my gallery get to see. This image is a heavily cropped version of the image I posted two days ago showing Main Ridge on Tangier Island. You can see the level of detail I achieve, you can count every grave site at the Swain Memorial United Methodist Church, Four Brothers Crab House is clearly visible, along with the grocery store and my favorite restaurant Lorraine's Seafood Restaurant. And this is all done from an airplane!

Aerial view to the north of Main Ridge Road, Tangier Island, Eastern Shore of Virginia. Tangier Island is easily one of the most fascinating places on the east coast. The island, and its 400 or so residents, have been well documented over the past years as they face an uncertain future due to erosion, rising sea level, and the sinking of the island itself.
