July 31st, 1970 was one of the darkest days in naval history-- the day the British Royal Navy stopped issuing sailors their 'daily tot,' or ration of rum. This day would be forever enshrined as Black Tot Day. Because we love a good underdog story, in addition to being students of history, today we are offering free samples of Black Tot Rum at our tasting station:

This aged rum boasts notes of vanilla and caramel atop a bed flambéed banana and cured leather. Cane sugar sweetness sits on the palate throughout, mingling with a pleasant, lingering island funk, and just a little bit of baking spices to round things off.

The Fourth Sunday of July marks National Pisco Day in Peru, so why not join in the fun here in Nebraska, too? While the origins of this grape pomace-based brandy remain hotly debated between the Chileans, we just want to stay neutral and celebrate pisco! Spirits Specialist, Tyler, recommends Barsol, from Peru, but we have one other Peruvian option, for the purists, as well as a Chilean pisco, for those who enjoy their schadenfreude. Regardless of origin, both countries agree that the preferred way to enjoy pisco is the Pisco Sour-- the question of how to make a Pisco Sour, of course, remains a fierce point of contention, but since the holiday belongs to the Peruvians, we'll do it as they do:

* 2 oz Peruvian pisco
* 1 oz lime juice, fresh squeezed
* ½ oz simple syrup
* 1 egg white
* 3-5 drops aromatic bitters, to garnish

1. Combine ingredients into a cocktail shaker with no ice and give a vigorous dry-shake.
2. Add a scoop of ice to the shaker and shake again until well-chilled.
3. Strain cocktail into a chilled Nick & Nora, coupe, or rocks glass.
4. Garnish with bitters on the top of the egg foam.

To make it the Chilean way, simply substitute a Chilean pisco and omit the egg white and bitters. With the omission of the egg white from the recipe, one can also eliminate the dry-shake step from the process, thus starting at step 2.
