Provisions Northampton is moving to Thornes this fall!

You’ll soon find all your favorite wine, spirits, and specialty foods (including their legendary cheese counter) on Lower Level 1.

We’ll be sharing more as the opening gets closer—so stay tuned, and help us welcome Provisions to their new home in the heart of downtown.

✨Spotlight Saturday✨

We are closing out our American Cheese Month Features with Alpha Tolman!

Alpha Tolman is made by Vermont all-star Jasper Hill Farm. Inspired by cheeses such as Gruyere and Appenzeller, it uses traditional Alpine cheesemaking methods of cooking and pressing the curds to achieve a tight, elastic, meltable texture and robust, complex flavors. Fully formed wheels of Alpha Tolman are washed in a cultured brine to give it a hint of funk.

The tasting notes of Alpha Tolman vary by age: younger wheels have a slightly sweet, fruity and nutty flavor while more mature wheels will take on meaty and caramelized onion notes. The texture is smooth, pliable, and perfect for melting!

Pair with Cabernet Franc, a robust Amber Ale, onion jam, or cured meats. It will also be delicious melted into a grilled cheese or over a plate of potatoes.

Part 3 of our American Cheese Month features!
🇺🇸 🧀
This week we are featuring a staff and customer favorite: Nancy’s Hudson Valley Camembert.

This delightful triple creme cheese is from Old Chatham Sheepherding Co based in Old Chatham, New York. This farm began as a 600 acre sheep dairy and is now the largest sheep dairy in the United States.

Sheep’s milk is naturally higher in butterfat than cow’s milk or goat’s milk, which helps give this cheese its silky, rich, buttery, melt-in-your-mouth texture. The center of the paste is bright and tangy with a sweet cream finish, while the rind gives it a slight mushroom note.

Pair with Effie’s Oatcakes, crusty bread, honey, anything pickled, or a white Bordeaux.

We’re celebrating another standout for American Cheese Month—and this one’s got main character energy.

Pasteurized Cow’s Milk

Aged 15 months

Beecher’s is an exceptional example of American-made cheddar. It has the classic “look” of a cheddar you would find at a deli counter or refrigerator at a big box grocery store: block-shaped, buttery yellow color. However, this cheddar is anything but ordinary. Its texture is slightly crumbly, yet rich and fudgy. The flavor is uniquely robust and complex: nutty, fruity and savory with that classic cheddar-y “tang”. Not only will this cheddar will be a hit on your next cheese board, it has a variety of potential culinary applications such as being mixed into macaroni and cheese or crumbled into an omelet or frittata.

Pair Beecher’s Flagship with a Pouilly Fuisse, Syrah, IPA or a Lager.
