We are closing out our American Cheese Month Features with Alpha Tolman!
Alpha Tolman is made by Vermont all-star Jasper Hill Farm. Inspired by cheeses such as Gruyere and Appenzeller, it uses traditional Alpine cheesemaking methods of cooking and pressing the curds to achieve a tight, elastic, meltable texture and robust, complex flavors. Fully formed wheels of Alpha Tolman are washed in a cultured brine to give it a hint of funk.
The tasting notes of Alpha Tolman vary by age: younger wheels have a slightly sweet, fruity and nutty flavor while more mature wheels will take on meaty and caramelized onion notes. The texture is smooth, pliable, and perfect for melting!
Pair with Cabernet Franc, a robust Amber Ale, onion jam, or cured meats. It will also be delicious melted into a grilled cheese or over a plate of potatoes.
