Ballykeefe Distillery, an entirely independent, artisan, and family-owned Single Estate Whiskey Distillery, is dedicated to a unique “field to glass” production process. Established in 2016 to diversify the working family farm in County Kilkenny for successor generations, Ballykeefe revives a century’s lost tradition of family farm distilling.
All of their Single Pot Still and Single Malt Irish whiskeys are triple distilled using barley sown, grown, and harvested entirely on the family farm. This commitment means that “Ballykeefe on the label means 100% Ballykeefe distilled spirit made from 100% Ballykeefe Irish barley, in the bottle,” making it a truly 100% ‘Single Estate’ Whiskey.
The Ging family, who own and operate the distillery, have an unbroken lineage of farming for centuries. The region itself is historically significant, renowned for the earliest written accounts of distilling in Ireland, recorded in the Red Book of Ossory in 1324.
Though it has existed as a farm since antiquity, whiskey production at Ballykeefe began in 2017, expanding to include Single Rye. The spirits are triple distilled in bespoke, Irish-designed, Italian-made copper stills, utilizing deep well Ballykeefe water. Ballykeefe whiskeys are generally non-chill filtered, offering complex flavor profiles.
Major investment in sophisticated technology and eco-friendly practices has ensured zero off-farm waste, earning Ballykeefe multiple awards for sustainability.
