🍙 Time for another Recipe Highlight! 🍙
We've had a bunch of people inquiring about the Rice Cakes in our cooler section, so we thought it would be appropriate to share a Spicy Cheesy Korean Rice Cakes Recipe! Also known as Tteokbokki!
Luckily we have all the ingredients you need to make this tangy dish, swipe right on the photo to see the ingredients available at Meadow Mart!
Ingredients:
½ Onion sliced (optional)
¼ Cabbage sliced
2 Scallions – 2-inch pieces
3 cups of Rice Cakes
2 cups of Dashi Stock or Vegetable Stock
1.5-2 tbsp of Gochujang
1 tbsp of Kikkoman's Kitchen Soy Sauce
0.5 tbsp of Sugar
1 tablespoon minced Ananda Gardens Garlic
3 tsp of Korean Chilli Flakes (Gochugaru)
1 tablespoon Champlain Valley Apiaries Honey
1 cup of Cabot Creamery Cooperative Mozzarella Cheese
1 tsp black pepper (optional)
Preparation:
1. Turn the heat up to medium-high and add Gochujang, Sugar, Gochugaru, Honey, Garlic, black pepper, and Soy Sauce.
2. Add a splash of dashi stock, Mix, and let it simmer for 1-2 minutes.
Pour in the rest of the dashi stock and bring to a simmer. Once simmering, add in onion and let it simmer for 3 minutes. (optional)
3. Add rice cakes and cook for another 5-6 minutes; make sure that all the rice cake is soaked in the sauce.
4. Finally, add in any toppings of your choice, like fish cake and cabbage, and simmer for another 3-4 minutes.
5. Add 1 cup of cheese and broil it in the oven till cheese is melted, or cover with a lid on so the cheese fully melts.
