Introducing two, new sparkling wines: To the Left - Jean Bailly Cremant de Alsace 'Grand Cuvee" nv ($45); eight years(!) in tirage, 50/50% Chardonnay/Pinot Noir - - - To the Right - Paul DeThune Brut Rose Grand Cru nv ($80); Madame DeThune was referred to the store by a wonderful customer and I selected this Rose' from her bag of legit-'growers' Champagne. Comprised of 80% Pinot Noir and 20% Chardonnay.
