Bourbon 101, Episode 4

Three numbers every bourbon must respect. It leaves the still at no more than 160 proof, enters new charred oak barrels at no more than 125 proof, and goes into the bottle at no less than 80 proof. Why does barrel-entry proof matter? A lower entry proof means more water in the barrel, and water draws out more of the oak's sweetness and color.

Bourbon 101, Episode 5

What's in the mash? By law, bourbon has to be made from at least 51% corn, and that corn is where the sweetness comes from. Most recipes then add rye for a peppery spice (some use wheat instead for a softer sip), plus a little malted barley. The barley's natural enzymes turn the grain's starch into sugar, which the yeast then ferments.

A word on the grain. Every bourbon begins with at least 51% corn. In a wheated bourbon, wheat takes the place of rye as the secondary grain, giving a softer, sweeter, rounder character. A rye wh***ey must be made from at least 51% rye, which brings spice, pepper and a bold, dry finish.

Bourbon 101, Episode 1 🔥

Ever wondered why bourbon tastes of vanilla and caramel? We set the barrel on fire. Charring the oak turns its lignin into vanillin and caramelises the wood sugars, and the bourbon soaks up every bit of it as it ages. Brilliant, isn't it? That's science.

Bourbon 101, Episode 3 🥃

"Sour mash" doesn't mean sour bourbon! Distillers add a bit of backset (the tangy, acidic liquid left over from the last distillation) to the fresh mash. That lowers the pH, so the yeast thrive while unwanted bacteria struggle, and every batch comes out more consistent.

Ever heard of the "angel's share"? While bourbon ages, some of it slips out through the oak barrel and floats away. In Kentucky that's roughly 4% a year. Our hot summers drive off more water than alcohol, so the proof inside the barrel actually climbs as it ages. Cheeky little angels.

Why does bourbon taste like vanilla and caramel? 🔥

We set the barrel on fire. Charring the inside of new oak breaks down the wood's lignin into vanillin (hello, vanilla) and caramelizes the wood sugars. Every sip is a little chemistry lesson.
