Anatomy is such an empowering topic.

What do your muscles and wine have in common?

They both have lactic acid!

Lactic acid appears as a result of prolonged and intense activity in the muscles and is a signaling molecule for the body, a signal we’re all familiar with.

With wine however lactic acid actually appears as a result of a process called malolactic fermentation. This is a process where certain bacteria transform the malic acid, commonly found in grapes, is converted into lactic acid. Ironically, lactic acid actually softens the acidic taste of the wine to provide a smoother, rounder texture to the palette.

Other notable acids that add to the palette of your wine are:

Succinic acid: brings a sensation of freshness and acidity on the palette, and notes of fruit and spice to the wine.

Citric acid: brings a very bright and fresh acidity to the palette, think lemons and oranges.
