It's Monday and we're back at it!👊 Let's talk Agave. Before we harvest, our agave needs to mature a LONG time.⌛ Mature agaves produce the sweetest agaves. How sweet? The closer we can get to 40 BRIX (grams of sucrose) the better. How long does this take? At least a half decade. 🤯

Over time we have come out with different Reposados, but we can't forget the original. 💗

Our OG Reposado is aged in used American oak wh***ey barrels by taste; expect flavors of cooked agave, oak and vanilla. We age to taste because we're looking for subtle barrel contribution, we always want agave to be the star of the show. ☯️

This is not an easy process; too much barrel contribution and you're drinking wh***ey, too little and you might as well be drinking Blanco. But, it's necessary for us to do this to bring you what we feel is the best representation of the style.💅

WOW! we had the chance to go back to where it all started, Huitzila, Zacatecas, Mexico. This is where my great grandfather, grandfather and father made agave spirits starting in the 1920s. We have so many pictures to share but let's start with water.💧

Within the Taberna (distillery) there's a natural water source, a spring filled drip by drip of water filtering through rock, soil and gravel. This unique water profile was used to fill the wood fired boiler, rinse bagazo (agave fibers), etc.🔥

After all these years we still use a natural water source in our traditional tequila making process, it's part of our thumbprint. We're a simple tequila brand, and we're appreciative for what nature has given us. 🏞️

Check this out! These are the ovens my grandfather and father used to make agave spirits all those years ago. 👨‍👦

These ovens were carved into the earth and were steam powered by a wood fired boiler. Till this day we still use traditional stone/brick ovens. ♨️

We're more than a tequila brand, this is our family tradition. ❤️

​Born in the 1950's in the heart of Tequila, Mexico, the Batanga was created by legendary Don Javier Delgado Corona. He was the owner and longtime bartender of La Capilla, one of the oldest and most famous bars in Tequila, Jalisco, Mexico. 👑

​Don Javier didn't just mix drinks, he created a legacy. Despite its simple ingredients, the Batanga became a cult classic for one specific reason... 🔪

​The "official" way to make a Batanga? You have to stir it with the same large, wood-handled knife you used to chop the limes. Don Javier claimed that’s where all the flavor lived! 🤤
