Try Papillon this thanksgiving it fills the glass with an unmistakable dark crimson, a flash of neon purple and a ruby rim. Tears move glacially and the wine opens with aromatics of boysenberry jam, violets, chocolate covered blueberry and hints of Cara Cara rind, graphite and brioche. The entry and mid-palate are bright throughout with considerable weight-tones of cassis, blackberry and baking spices flourish. TRE stands for its three grape varieties Sangiovese, Merlot and Cabernet Sauvignon as well as for its three Tuscan vineyards (Maremma, Castellina and Radda in Chianti). The assemblage is dominated by Sangiovese with 70 percent, but Merlot and Cabernet Sauvignon also bring their charm with 15% each. This well-structured, medium-bodied wine is aged for twelve months before it is bottled. Two thirds of the expansion takes place in French tonneaux and one in cement. This elegant, well-structured cuvée offers plenty of drinking pleasure now or later and goes well with every kitchen.

ALCOHOL: 14.5%

TASTING NOTES: This Cabernet Sauvignon opens with aromas of bright red plum, dried orange peel, and ripe pomegranate, with a cornucopia of flavors dancing on the palate. Ripe blueberry is nuanced with hints of vanilla, red currant, and cedar. This is an incredibly plush and juicy wine with a finish so long it will take you into extra innings.

VINEYARD & WINEMAKING: This Cabernet Sauvignon was harvested from the Domenico and Acquarello estate vineyards in the Estrella District of the Paso Robles AVA. The vineyards undergo strong diurnal temperature swings with cold nights and hot days. This variance in temperature allows for even ripening in the fruit as the warm days help foster sugar development, and the cool nights help preserve acidity. Following harvest, the grapes underwent an extended fermentation period, fostering the development of structure and depth. After a delicate pressing, the wine was aged in a carefully curated French oak barrels. Aged for 24 months in 30% new French oak.

At first glance, the 2022 Eight Years in the Desert looks to be almost black, but after closer inspection, a dark crimson starts to shine through with a tinge of purple on the rim. The nose is rife with notes of ripe blueberry, black plum, wild raspberry, espresso bean, sweet oak and a hint of crème de menthe and cedar. The entry is akin to walking through a tunnel of velvet walls with blackberry jam, reduced strawberry and a touch of rhubarb. Bright acidity throughout the palate, the wine closes with round, ripe tannins, fresh pluot and dark chocolate, and with a 93 point score from Decanter it is sure to impress!

These aromas translate seamlessly onto the palate, where the wine offers a perfect balance of fruitiness and acidity. The flavors are intense and well-rounded, with a perfect integration of oak that lends subtle hints of vanilla and spice.

Its complexity and balance make it an excellent match for seafood, especially grilled or pan-seared fish, or creamy pasta dishes. Its vibrant acidity also complements spicy dishes such as Thai or Indian curries.
