Who’s on your casserole-sharing list? 🫶🏼 Sweet, fluffy, and oh-so-delicious - this marshmallow sweet potato casserole by Roots Farm Fresh is the perfect dish for your holiday table - get the recipe below!

Ingredients:
1 bag Sweet Potato Croutons
2 tbsp melted coconut oil
1 tbsp cinnamon powder
2 cups mini marshmallows
For the streusel:
1⁄2 cup all purpose flour
1⁄2 cup granulated sugar or brown sugar
2 1⁄2 tbsp melted coconut oil

Instructions:
- Preheat the oven to 400 degrees F.
- Place sweet potato croutons into an 8x8 baking dish. Drizzle melted coconut oil over top & sprinkle with cinnamon powder. Mix with hands. Bake for 15 minutes.
- While the sweet potato croutons are baking, create the streusel topping. Combine all three ingredients into a bowl, mixing until a crumbly texture forms. Set aside.
- Remove sweet potatoes, then top with marshmallows in an even layer. Sprinkle streusel topping over marshmallows. Bake again for 15 minutes.
- Remove once marshmallows are toasted brown & serve immediately!
