My all-time favorite thing to do with Violets is to make this beautiful purple jelly!

What you will need is:
💙3 packed cupfuls of only the violet flower (make sure to pick off the stems)
♨️ 4 cups boiling water
🍯 4 cups of Sugar (or sugar substitute - you can make a syrup with honey and leave out the pectin)
🍋 1/4 cup Lemon juice (or juice from 1 whole lemon - fresher is better!)
🍎 1 packet liquid Pectin

Supplies you will need, will be jars with lids, a water bath canning pot, a jar lifter, some towels for the countertop, a ladle, a canning funnel, and measuring cups.

First gather your 3 packed cupfuls of Violet flowers. Make sure they are clean and there aren’t any bugs. Then you want to get the water boiling. Once it is hot, pour the water over the flowers in a glass bowl. Stir a little, then cover the bowl with either a lid or plastic wrap and let it sit for up to two hours.

When you are ready to move onto the next step, fill your canning bath up with water and bring it to a boil while you prep your space for canning. Make sure you have a towel down on the countertop underneath the jars.

Strain out the flowers and then add 1/4 cup of lemon juice. The liquid will turn from a dark blue to a vibrant purple pink color.

Poor the liquid over the sugar and a pot and bring it to boil. I use the liquid pectin, so follow the directions on the box - typically once the sugar mixture is at a boil, then you’ll add the pectin. Stir for one minute and remove from the heat.

Quickly ladle your liquid jelly into your canning jars, wipe off the top of the lids for proper sealing, and screw on the lids. You will need a mitten to hold the jar as it will be extremely hot. What the jars are sealed. Using your tools pick up the jars and put them in the rack for the Canning bath. Make sure it is completely filled up with jars, and none will be able to tip over, be very gentle, as they will break extra easily. Once the rack is full, submerge the jars into the hot water bath with 2 inches of water above the jars. Boil the jars for 10 minutes. Then remove them and space them out on the towel on the countertop. Let them cool until sealed.
