A Chardonnay from Domaine Derain, Saint-Aubin 1er Cru “En Remilly” 2022 comes from sunny, south-facing limestone slopes near Montrachet. Planted in 1988, the vines are farmed holistically, with the wine direct-pressed, barrel-fermented, aged 18 months on lees, and bottled with no added sulphites.

This wine is lean and fresh rather than rich and creamy. It opens with a light matchstick note, followed by lime zest and a wet-stone minerality. Decanting is recommended, and aging for 3–4 years will greatly improve it.

Fossil & Fawn is the wine project of partners Jenny Mosbacher and Jim Fischer. What began as 50 cases of experimental Pinot Noir in 2011 has grown into about 5,000 cases across eight wines from the Willamette Valley. Even as they’ve expanded, their goal stays the same: make vineyard-driven wines that honor the land and keep things fun and experimental.

Their motto: Get Weird, Suck Less.

They source from sustainably farmed, small, family-run vineyards, including their own in the Eola Hills, because great grapes come first. In the cellar they keep things simple: native yeast, minimal new wood (mostly Oregon oak), careful sulfur use, and occasional gentle filtration. It’s a loose framework, not a strict rulebook.

THE WINE: Pinot Noir
A blend of Pinot noir barrels sourced from all the vineyards we work with across a few of the Willamette Valley sub-AVAs, with vine age ranging from 20 to 50 years. Aged in predominantly neutral oak barrels, the point is to let the fruit shine. Christina Netzl, the winemaker behind our Christina wines, grew up on her family’s mixed farm, helping with everything from crops to pigs to a few vines. She fell in love with wine early, working in the vineyards, helping in the cellar, and sharing stories with customers. She always knew she wanted to be a vintner.

As her parents shifted fully to winegrowing and expanded the estate to 28 hectares, she learned classic winemaking from her father. Curious about the science behind wine, she studied enology and wine management, and an internship in London opened her eyes to the huge variety of wines and styles around the world.

Inspired by organic producers and the character of her home region, Carnuntum, she returned to the family winery in 2007. Growing more aware of soil health and nature in the vineyards and influenced by raising her two young daughters she and her husband began converting the vineyards to organic farming in 2013. They received official certification in 2018, with 2021 as their first certified vintage.

In the cellar, Christina began experimenting with low-intervention methods and fell in love with the vibrant wines they produced. Today, she makes her own line of natural wines alongside the classic styles passed down from her father.

“Les Vins Pirouettes” is a collective project started by Christian Binner, a well-known Alsatian winemaker famous for his zero-zero wines. In 2008, he noticed that organic and biodynamic growers were selling their high-quality grapes cheaply to cooperatives. To support them, he encouraged these growers to make and bottle their own wines, celebrating real terroir and natural winemaking.

They chose the name “Pirouettes” to show both the fun of the project and the skill behind the wines. Christian says the wines are like graceful artistic moves—full of freedom, emotion, and joy. It’s a fitting name for this group of talented, independent winemakers and a meaningful legacy for the person who inspired it.

THE WINE: Cubique Rouge
The grapes are picked by hand and fermented naturally with native yeasts. Maceration times change depending on the vintage and style, and the wine ages in stainless steel or neutral oak to keep it clean and true to its terroir. It’s bottled without fining, filtration, or added sulfur.

Cubique Rouge is a bright ruby-red wine with aromas of cherry, raspberry, light florals, and a touch of spice. It’s light-bodied, fresh, and full of juicy red fruit.

Alberto Nanclares became a winemaker by accident. He and his wife moved from the Basque Country to the coastal village of Castrelo, and the house they bought happened to come with vineyards. Even though he hadn’t planned on making wine, the idea of farming kept calling to him. He slowly invested in equipment and started making wine in his garage. Over time, he shifted from conventional farming to organic and biodynamic methods—no small feat in a region where growing grapes is tough. He even uses seaweed from the nearby Atlantic as compost. Today, he produces excellent Albariño along with Garnacha, Mencía, and other local grapes, all offering great value.

As shown on the label, the vines are trained on pergolas. The area is cool and humid because it’s so close to the ocean, so this pruning style helps airflow and sun exposure. The vines are 25–45 years old and grow on granite right above the Atlantic. Unlike many growers in the region, Alberto doesn’t add potassium to soften the acidity—he prefers to let the wine’s natural brightness shine.

THE WINE: Dandelion is Albariño made from several vineyard plots in Meaño, Cambados, Ribadumia, Meis, and Barro. The vines are 25–45 years old, mostly west-facing, and grow in sandy granite soils. The grapes are hand-harvested, sorted, and gently whole-bunch pressed. The juice ferments with native yeasts in stainless steel, then ages on its lees for about 6 months in different vessels, with weekly stirring during the first month.

This wine is full of bright citrus and green apple flavors, with hints of fennel, dill, and great depth. It has refreshing acidity and a strong salty, sea-spray character. A bit of lees aging adds weight, helping to balance the lively acidity.

Envínate’s philosophy is simple — let each vineyard speak for itself through traditional farming and winemaking. The result is some of Spain’s most exciting wines.

This bottle shows the volcanic character of the Canary Islands with bright red fruit, pepper, floral notes, and mineral depth — perfect with grilled meats.

THE WINE: Benje Tinto
is sourced from several old-vine, untrained pie franco parcels of Listan Prieto (aka Mission or País). Each parcel is hand-harvested during the first half of September, destemmed and vinified separately, some in concrete tank and some in small
open tubs. Maceration is 10-20 days (depending on parcel) with daily punch-downs, pressed 40% into concrete tank and the remainder into neutral French barriques for malolactic fermentation and aging on fine lees for 8 months, without battonage or added SO2. Bottling is without filtration, and clarified using natural vegetable proteins.
