Walleye Run's limited release Bourbon has officially landed. 🥃 This small batch is available exclusively at our New Holland Brewing Pubs, New Holland Tasting Rooms, and our online store (coming soon!) limited quantities.

Five years ago, we wrote and distilled a recipe for a new mash bill that was built with a significant percentage of malted wheat (our first wheated bourbon recipe). We sought out to bring new flavors to New Holland bourbon featuring additional fruit-forward notes, worthy of the Walleye Run portfolio, distinct from our traditional mash bill found across our Dragon's Milk line.

Five years later, this pot-distilled specialty release opens with notes of rich caramel, ripe stone fruit, sawn-oak wood, and candied tropical fruit. On the palate: smooth caramel sweetness unfolds into layers of subtle wood spice, sweet peach, balanced with warmth from the gentle grain character that adds depth without ever overpowering. The finish is clean, steady, and lingering, with hints of oak and soft, sweet fruit that stay with you.

This new mash bill of 53% corn, 28% malted barley, 16% malted wheat, and 3% malted rye welcomes a new, yet familiar flavor profile to the New Holland bourbon portfolio. Walleye Run Bourbon is limited to one small release in the summer of 2026 and 2027, with barrels laid down for larger releases in 2028 and beyond.

Fisherman’s Batch is the first rollout of our partnership with Journeyman Distillery. This release is a sweet mash 7 year malted rye blended and then aged in brandy and toasted oak casks. On the nose, expect honeysuckle, baked apple, toffee, and caramelized sugar.
