I had the very lucky opportunity to taste Chotokusen Hakutsuru Tenkū Fukurotsuri Junmai Daiginjo, an extremely limited sake crafted with Hakutsuru Nishiki, a rare rice variety that Hakutsuru revived from Yamadaho, the parent strain of Yamada Nishiki. This sake embodies the pinnacle of Hakutsuru’s craftsmanship, blending tradition and innovation into a truly exceptional experience.
Tasting Notes
• Aroma: Elegant and refined, with notes of white peach, melon, soft floral hints, and a touch of steamed rice and minerals.
• Flavor: Silky smooth and well-balanced, offering gentle sweetness, delicate umami, and a refined depth. Compared to Yamada Nishiki, which is more vibrant and dynamic, Hakutsuru Nishiki delivers a more serene, elegant, and contemplative profile.
• Finish: Long and graceful, leaving behind a soft yet unforgettable impression.
