Bordeaux is home to many legendary, long-lived estates. A fair number of these trace their lineage back over more than a thousand years. Only one can say they’ve been continuously organic for over half a millennium. Chateau le Puy is that singular estate. And the w**es themselves are very impressive, not only in terms of quality and expression, but in terms of longevity as well. A few years ago we had a chance to taste bottles across one hundred years of production at Le Puy. The 1922 was one of our favorites. That is w**emaking! And yet, no artificial yeast, no pesticides or insecticides, no chemical fertilizers or any kind of artificial input, no temperature control in the cellar… Nothing like that was required, nothing like that was done, during that hundred years or ever. It’s an historic and inspiring achievement. (What will we do with our tiny corner of the universe?) Le Puy has been producing w**e since 1610, and is currently run by the 14th generation of the Amoreau family. Today they include biodynamic practices in their viticulture as well. The w**es are gorgeous, and as if all that weren’t enough, they are shockingly affordable as well. There’s nothing like Le Puy.

Elise Dechannes has been crafting singular *****ne in Les Riceys for almost twenty years. And while she is retiring, her w**es are anything but. ‘Essentielle’ is a truly stunning copper-salmon color in the glass. Citrus zest, rose petal, pink currant & chalk knit together with a structured acidity. Biodynamic Pinot Noir vinified in amphora with zero dosage - unfined & unfiltered.

Ch*****ne today, Ch*****ne tomorrow! Aurelien Gerbais is making the most delicate and beautiful bubbly we’ve enjoyed this season. The Pierre Gerbais estate (Aurelien is the fourth generation) is in Celles sur Ource in the Aube, where Bouchard also operates. Out of 18 hectares, half is Pinot Noir, typical for this area. Four are planted to Chardonnay and FOUR TO PINOT BLANC! There’s only about 100 hectares of this grape in all of Ch*****ne, and it tends to sing when vinified on its own, as it does here. Pictured are Pinot Noir, Pinot Meunier, Chardonnay & the Pinot Blanc. Organic, parcellaire w**es all from solera. Quantities are limited.

Diogo & Ines from Dona Berta Behind the Bar

The Douro is a magical place. It’s named after the winding river that cuts through the sun-drenched hills on its way to Porto and the sea. From the 17th through the 20th centuries, this region was almost exclusively the production area for Port w**es. Today we see more and more dry w**e being made here for export as well as for domestic consumption. Locals always made these w**es for themselves and their neighbors, but until recently few ever received labels and corks. Lucky we are now.

The w**es of Dona Berta play a key part in the changes occurring in this river valley. Today this 15 hectaare project produces unique and age-worthy w**es made from the ancestral grapes of the Douro on its famous schist soils. Elegant, classic, old-school w**es. And, like those from Portugal in general, they are still remarkably affordable, especially given the relative value they offer against the rest of Europe. Tonight, we welcome w**emakers Diogo & Inês, who will be pouring these exceptional w**es for you.

Some w**es are better than others. These (very) late-release Renaissance Cabernet Sauvignons are better than most. The product of Gideon Beinstock’s time at Renaissance W**ery, this current drop has become an obsession at Dandelion, as Gideon has been for so long. Gideon has run his own w**ery – Clos Saron – since 1999, but he continued making w**e at Renaissance through 2006. The w**es are legendary for many reasons, not least as a revelation of the power of decomposed granite soils in the Sierra Foothills. 1999, 2001 & 2002: they’re ready to drink! At a certain point in the evening, it’s time to take a Cab.

Scar of the Sea and Lady of the Sunshine are here! We’ve been big fans of the w**eries on the cool San Luis Obispo Coast for years now, and Mikey & Gina were the trailblazers here. They were able to purchase the Bassi vineyard recently – no mean feat – and the Scar Bassi Syrah took top honors at “The 1976 Re-Do”, a contemporary version of the infamous Judgment of Paris. TONIGHT 6-8! Calcarea W**emaker Juan Jurado Behind the Bar
Some of our favorite dry white w**es today come from Jerez, Andalusia’s Sherry region. These are bright, fresh dry w**es coming from a parched, sun-baked landscape. Juan Jurado spent the better part of a decade working in other regions before returning to his native Jerez. In 2022, he invested all his savings to purchase a small vineyard in the Miraflores de Sanlúcar estate. This marked the birth of Agrícola Calcárea. Calcárea – named for the soils here – is truly a labor of love. It’s all done by hand and with an emphasis on the sustainability of the vineyard. Juan works with almost extinct heirloom varieties of grapes. The w**es feature subtle stone fruit aromas, with spiced, mineral, chalky, and salty notes. They are light and refreshing, savory, and distinctly saline. Today he has a little more land but we’re still talking about less than 2hA of vines. Needless to say, the quantity of w**e the estate produces is quite limited. Everything is organic and biodynamic techniques are also used. All the w**es are unfined and unfiltered.
