This Saturday’s tasting, we’re getting NERDY! How will climate change affect the wine industry? How will warmer temperatures change where grapes can be grown? And what can we do as lovers and consumers of wine to ensure that we are reducing our impact on the world? We will taste wines from some of the few areas that will see increased suitability for grape growing as the planet warms, learn about how vintners are attempting to address climate impacts, and what work is being done to make the wine industry more sustainable!

This week our wine pick Wednesday stretches the definition of β€˜wine’ and possibly β€˜Wednesday’! β€œCoferment’s” are wines produced from the juices of more than one type of fruit fermented together, producing a funky, layered, and always surprising beverage. These three wines represent three different approaches to conferment’s as they become more popular within the natural wine space.

Achillee Quetsches alors ($19.99, in sale for 14.99) Achillee vineyards in Alsace, France, is a (relatively) venerable producer, having worked the vineyard for more than six decades and been certified biodynamic for over twenty five, the winemakers Jean and Pierre Dietrich bring years of experience to this fresh and sumptuous pet-nat made with a cofermentation of Damson plums and crisp Riesling grapes.

Matthiasson Grape + Peach ($39.99) Matthiasson is a giant of natural winemaking in California, with their Napa winery serving as a lodestone for increasing industry interest in natural, lighter, lower alcohol wines. Their coferment pairs white wine with some of the 14 varieties of peaches grown at their winery, producing an accessible, clean, yet invigorating sparkling wine.

Patois Parallel Voicing 2024 ($25.99) Patois are and always will be the anarcho-punks of natural wine. Foraging for crab and heirloom apples, this husband and wife team distill the rustic beauty of Virginia into sophisticated, subtle, and always enjoyable coferments. The 2024 vintage is made with apples and Chardonnel, itself a hybrid between European and American vines.

Old Forster has long been a staff favorite for their dense, rich, full-bodied bourbons and eyes that deliver on bold flavor and consistent quality. This single barrel bourbon is not for the faint of heart! Coming in at 132 proof, this bourbon is densely woven and heavily aromatic. Notes of freshly baked banana bread, brown sugar, toffee, and sweet espresso. The finish is an interesting mix of dried fruit, saltwater taffy, pipe to***co, and peanut brittle. The finish is surprisingly mild and polished given the high proof. A must try!
